A sour collaboration with Crooked Stave.
Sour ale fermented in fouders with 3 strains of brettanomyces, aged in cognac barrels 11 months with a funky bunch of bacteria.

750 ml corked and caged bottle poured a clear reddish brown with a small lingering tan head. Aromas of toffee, cognac, oak, horse blanket and fruitiness. Palate was light bodied and crisp with a dry tart finish. Flavors of toffee, tobacco, horse blanket, fruitiness, light oak and light cognac with a crisp dry tart lingering tobacco finish.

Sour aroma with caramel, fruits, balsamic vinegar, oak. Tart and slightly sweetish flavor with vinegar, oak, caramel, fruits. Medium-bodied.

Sample at Crooked Stave. The beer pours a clear ruby-brown color with a medium off-white head that diminishes steadily to a film. Strings of lacing on the glass. The aroma consists of oak, tart fruit and caramel. Medium-bodied with flavors of vinous oak, caramel malt and funky yeast. The finish is brett yeast and tart vine fruits. Pretty good all around.

Bottled. Dark amber/brown coloured. Unclear. Dense beige head. Aroma. Sourness, berries, spice, light tart, oak. Flavour. Berries, oak, sourness, tart, citrus, grape, spice. Medium to full bodied. Ends full of sourness, grape and tart. Light berries touch in the end as well.
