Bomer, C&C. Hazy brown with a frothy beige head that lasts on the sides but slowly dissipates. Aromas of sour plum and cherry, oak, funk, toasted malt, light vanilla, light caramel, cognac and vinegar. Flavor is sour cherries, plum, oak, funky yeast, toasted malt, light cognac and vanilla. Medium Bodied, acidic and dry. Lingering sour cherry/plum.

Bottle... Cloudy Longhorn-orange pour with no head. The aroma is stacked with yeast-driven spiciness, some maltiness and a decent element of stone-fruitiness. Full-bodied with airy carbonation. The flavor is tart, malty and fruity, although theres less fruitiness and sourness than I was hoping for. At least there is some slight cognac warmth. Finishes tart, raspy and dry. Bottle courtesy of biggsbowler!

[1/30/16] Bottle sample at the Encomium bottle share, after RateBeer Best awards ceremony at Hyatt Vineyard Creek Hotel in Santa Rosa. Thanks everyone who shared bottles! Murky amber-brown. Sour aroma with caramel, fruits, balsamic vinegar, oak. Tart and slightly sweetish flavor with vinegar, oak, caramel, fruits. Medium-bodied.

Bottle share, again thanks to Matt. Murky brown color with a sandy head. Nose is fruity and sour, brett, and oak. A deep underlying wave of sweetness accented nicely by the sour notes. Oak, brett, vanilla, and something fruity like pie cherries. Soft. Very nice.

Bottle share from Matt. Light, effervescent, sweet, all around great. A nice break from the crowd and palate cleanser.

Bottle. Murky brown pour with light white head. Aroma is strange, some sour funk mixed in with some dark fruit undertones, hard to describe but very different, could be th use of cognac barrels. Taste is light sourness, oak, black currants, with a semi dry finish. Very nice beer, dont know that Ive ever had a sour aged in cognac barrels, the result is pretty darn interesting.

[ bottle ][ 6oz ][ @tasting ][ $ ? ][ snifter ][ 10.25.15 ]
Tiny-chestnut, thin white cream head. Muted sweet cherry acetic nose, some playdoh, lightly salty. Plum flavor sweet up front, heavy cherry acid mid with soft, waxy Brett saddle mid-late, some light stable and citrus throughout, fruit-acid-sugar three-way but all of it hot, not integration either.

Pour is dark brown with off white head. Nose has an off plastic, burnt wood, booze, toasted grain, and sour cherry. Flavor is better, still overly sweet and singular. Sour cherries dominate, faint booziness, light wood, acetic acid. Soft feel, low carb, semi dry.

750 mL bottle poured into a snifter. Deep brown with a khaki collar. Heavy brett and toasted malt. Light acidity. Taste is dark fruits and strong tartness. Heavy brett earthiness. Dark fruit sourness in the back end with some toasted malt bitterness. Medium body. Pretty interesting. I dont get any barrel, though.
