Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Pale golden with rich white head. Slightly fruity aroma. Strong bitterness on the background of wit beer and lambic taste. Some spiciness (coriander?). Lasting bitter aftertaste deeply in the throat.

Pours a cloudy golden yellow with big fluffy head. Aromas of tropical fruits, grass, and some brett funk. Flavors are all tropical, grassy, yeasty, with some lingering funk.

Pours a bit foamy head (half the pint glass) on the lightest straw body. The aroma is a big hit of spices and flowers. Nice. The taste is fairly clean, a little spice, mellow fruits and finishes with a mild lemon bitterness. The texture is crisp. The aroma is great, the flavor may get better with age.

UPDATED: MAY 9, 2017 Visual: Twisty wire cap and composite cork. Pours light straw yellow with huge slowly dissipating creamy bubbly head, torrents of fast activity, small bits of sediment.

Nose: kumquat banana wheat malt, traces of funk, quite bright. (lvl-6)-pungency

Attack: fizzy-bubbly wholeness,

Mid-palate: (lvl-3)-sweetness, sharp sour-tangy acidity, (MAIN) background funk, juicy kumquat citrus, banana wheat malt -> dry hoppy bitter

Finish: light oak, coriander, dry wheat, lingering bitter hops, kumquat exhale, background peppercorn spice, burpy.

Summary: Very refreshing with a boatload of flavours to discover all the while backed up by a very bubbly mouthfeel. Although only medium-bodied, it delivers in smooth transitions and enticing complexity.

That wonderful characteristic Galaxy nose. Tropical and citrus fruit. Very hazy and pale. Appearance is not this companies strong suit. Palate is brilliant. Soft sweet then syrupy with tingly carbonation and pepper finish. Very subtle. Real good.

Keg at CPK. Quite a vibrant yellow, hazy, still, small foamy white head. Aroma is wheaty, lemon. Body is light, spritzy, slightly foamy. Taste is earthy, wheat, leaves, jelly babies with extra dusted sugar, chalky, dry papery finish. Dry, dirty and earthy. Not as clean as expected, but decent.

Keg at CPK - London. Pours hazy yellow with a creamy white head. The nose has some creamy pale malts, tangerine, straw, grapefruit. Light sweet flavor with lots of flinty minerals, rindy citrus, cereal grains. Light to medium bodied with average carbonation. Light funky character on the finish, some white grape, pale wood, minerals, grassy bitterness, lemon rind. Novel.

Aroma: light yeast, barnyard, light citrus. Appearance: hazy, light yellow, small, creamy, white head. Taste: medium bitter. Palate: bitters continue, brett, farmhouse, getting quite intensely bitter, light sours coming up, light exotic fruits kicking in very late. Overall: nice IPA, interesting play on brett flavours. Pint at CASK Pub & Kitchen, Pimlico.

Batch #8, April ?15. Big Bottle from Total Wine to glass, light golden slightly cloudy. Humongous light foamy head. Delicate Brett/ lemon /faint leather aroma. Lightish grain/ funk/ mild hops . Intensely dry. This is the true champagne of beers. Pairs great with seafood.
