This is a variation on the classic Belgian Witbier style, but aged in French Oak Chardonnay barrels

Brewed with lemon peel, black peppercorns and corriander (sic).
Triple fermented - first in the tank with Belgian yeast, second in french oak Chardonnay barrels with brettanomyces, and finally in the bottle with a third yeast for natural carbonation.

redlight (2318) - Orlando, Florida, USA - JUN 25, 2012
Funky brett on the nose with hints of bread wheat in the background. Pours clear blonde with a thick white head that dissipates quickly. Funky brett, very briny, with a floral sweet note, the beer finishes with oak and dry funk. Not bad but i wish there was more of a Witbier in there.

750 ml bottle from Wine and Cheese Place. Pours a pale, hazy straw color with a finger of bone white head that settles into a small, lasting cap. The aroma didn’t quite pop with bretty goodness like I remembered (I had it late last summer when it was fresh, too), with notes of summery barnyard funk, sweat, lemon citrus, chardonnay, coriander, wheat, and peppercorn. The flavor is almost exactly the same- oak, chardonnay, wheat, lemon, funk, spice. Light-bodied, with a funky mouthfeel and low carbonation. Consumed on a hot summer night and it was pretty refreshing, but restrained from the fresh version. I guess you shouldn’t sit on this one.

25.4 oz bottle, May 2011, batch #1. Clear olive yellow with a snowy white head. Nose is lemon, grass and vanilla yoghurt; yeah, it’s pretty funky, almost fishy. Medium body with lively, spritzy carb. Taste is lemon peel, chardonnay, a pinch of pepper with lingering coriander and green apple. Nice hybrid; i was hoping a bit crisper.

Bouteille de 750 ml. Arômes doux et complexes de vin blanc, de brettanomyces et d’agrumes. Robe blonde et trouble, légère dentelle et effervescence assez active. Vraiment très délicate et raffinée en bouche, cette bière montre les caractéristiques attendues d’une wit (blé, agrumes) ainsi qu’une belle touche de vin blanc et de brettanomyces. Finale délicatement acide. Très belle texture nuageuse. Vraiment une belle création, dangereusement facile à boire.

Bottle, purchased at Hill Farmstead. Hazy yellow with a fizzy white head. Nose is lemon, oak, lightly buttery chardonnay notes, lots of pineapple brett. Nice, smooth flavor, some more lemon, pineapple, buttery oak. Not quite up to par with some of the others but still damn tasty.

Bottle 75 cl. Courtesy of Storm, thanks for a great New Years evening! Average creamy fin head that mostly lasted. Fair display of lacework. Aroma of Brett, citrus, leather, light grass with some fruit and malty feel to it as well. Some wood and light citrus fruity notes. Medium bodied with an average carbonation and somewhat oily texture. Moderated sweet and light bitter flavor with some acidic. Wood and light acidic finish with some fruity notes.

UPDATED: JUN 28, 2012 Bottle to pint. Looks solid; a hazy yellow with lots of head. Smells funky; like baby shit. Tastes nothing like it smells (which is a good thing). Chardonnay. Nice on the palate. I don’t know if I can revisit this due to how offensive it smells.

Incredible aroma, absolutely a little wild, funky, tart, with discernable chardonnay. Lovely, lovely aroma, could smell this for hours. Flavor is a bit sour, spicy (pepper, clove, coriander) but not over the top. Pretty normal flavors for a wit but woody, thin, reedy. Easy to drink, maintains good carbonation almost until warm.

Wow this is one hell of a wit. Pours hazy straw color with a decent white head that slowly fades. Smells nice and funky with your other ordinary wit characters of coriander. Taste is good and clean with coriander notes and hints of funk and oak, I was hoping for it to have a little sourness to it but oh well its still fantastic.
