Cider House Collection #2: Inspired by the tradition of Ice Ciders in Quebec, Canada, Iceman uses the process of freezing the juice from culinary and bittersweet apples to produce a rich, complex and unique cider with a crisp apple taste and notes of caramel and toffee. This cider is sweet but not cloying. The addition of oak-aging yields a smooth and pleasing vanilla character. The result is a perfectly balanced, full-flavored cider that delights the palate with clean apple notes and a lingering toffee finish.

Bottle poured into a shaker. Ppurs a clear dark gold with lots of little bubbles. Aroma is mostly sweet and tart apples with a hint of toffee and a little vanilla. Taste goes back and forth between heavily sweet and heavily tart. Apples and apples with candi sugar, light vanilla, light oak and a little toffee. Thick and sticky texture with a finish that gets more boozy as it warms. Overall, really good. Ive never had an ice’d cider before but im really digging this style.

Clear copper with a white head of fizzy foam. The aroma has notes of caramel apple, earthy and citrusy apple notes. Fairly dry. Slick mouthfeel. Big body and moderate carbonation.

Smells of vanilla and some spice. Taste is smooth, almost like a baked apple or something, apple flavor but not quite the same, honey. Alcohol is well hidden but there is a noticeable boozy warming effect. I like this.

Bottle from Cost Plus World Market. Love this place. Seeing magnums of Anchor Christmas stocked alongside inappropriate clearance holiday ornaments, ...it really makes my day. Clear, golden orange body. Very frothy. Unusual. Smell is thin, bitter sharp, acidic & toasty. Taste is rich, but incredibly sharp. Buttery, plainly tannic, intensely tart. Lingering tartness, oh does it ever. Difficult. So sweet, so sharp. Not a lot of complexity from the apples. Hidden alcohol. Just a bomb. Hope this stays well in the fridge, because I can’t come close to finishing my glass.

Aroma is mostly apples, a bit of cinnamon. Pours solid gold, and I had a decently frothy head that disspiated slowly. Bubbly. Pretty sweet, hints of vanilla. Heavy on the tongue, and smooth going down. 10% ABV makes this a drink to be cautious with. Easy to indulge!

Bottle. A- Apple juice, white wine, subtle vanilla. A- Amber color, clear liquid, minimal white head. T- Apple juice, white wine. P- Light body, average texture, high carbonation, slightly sweet finish. O- Okay, just glad to get my ice cider tick. Didn’t taste much different from a normal cider other than seemingly boozier. If this is a very good representation of the style. I’ll be okay with having this one only.

Rating #1950 - 2015.09.25 #CraftTakesSeattle Day 2, Beer 50 - Bottle share. Aroma is fleshy apple, as if on a cutting board in front of you. Taste is warm alcohol, sweet apple, hint of brown sugar. Mouthfeel is slight carbonation, but smooth, silky. Dangerous at 10%.

Visual: Composite cork with a twisty steel cap, hefty bottle. Pours deep dark golden orange with no head, a small island off to the side, just a few bubbles surfacing.

Nose: filtered apple juice, a touch of perfumey acidity. (lvl-5)-pungency

Attack: dense syrupy sugars, heavy entry

Mid-palate: rich filtered red apple juice, big tangy-alcoholic acidity, elderflower, (lvl-7-sweetess)

Finish: red apple juice exhale, sticky tart cloying sugars, mild woodiness.

Summary: Very sugary forward with a rich red apple body and tangy acidity to hold it together. The alcohol is quite noticeable and adds to the heaviness factor. I find this to be too cloying and palate-heavy for my tastes - not quite as refreshing or bright as I’d hoped.

Bottle at Greene Turtle BWI. Slight orange and brown body. Nose is fruits, apples. Taste is similar of apples and malts. Crisp texture. Not bad at all.

Bottle share @ DLD 2016. Pour is clear yellow/gold with some slight lacing. Aroma and flavor of apple juice, oak, bitter apple peels, and a touch of vanilla. Finish is boozy and sweet.

750 ml. corked and caged bottle. Pour a minimal, poorly retained ivory head, with no lacing, over a clear light amber (SRM 7) body........nose is mild lactic acid, light apple, slight vanilla.......taste is moderately sweet, with equalizing tart acid, primarily lactic in type, apple, with Granny Smith notes, finishing drier, with lingering tart acid.....mouth feel, medium sticky body, alcohol warmth present, mild hints of astringency, carbonation high. This is a rich, alcoholic cider. It has nice complexity for a cider making for a quite enjoyable beverage. BJCP 9/3/15/4/8
