COMMERCIAL DESCRIPTION
Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey "Bourbon." He built his distillery in Bourbon County, Kentucky in 1790 - 203 years before began brewing. While obviously a bit too late to produce Uncle Jacob’s wash, we’ve instead created something far more complex. In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest bourbon barrels. This explains a lot about our penchant for big brews! It’s in our blood!
Brewed with Rocky Mountain Water, Malter Barley, Flaked Oats, Hops and Yeast.

Served from a 12 oz bottle from OTM. The appearance is a rich glossy black with some ruby edges. A nice mahogany head. Rich roasty malts, sweet brown sugar, bourbon, and barrel fill the nose, with a heavy booziness but not a pure alcohol. The flavors follow with a rich full roast malt, sweet oaky bourbon, peanut butter blossom cookies, brown sugar, molasses, very nutty, some buttery-ness. Very full mouth with a good drying oak on the tongue and a alcohol burn on the roof and cheeks. The booziness is there but it’s not raw alcohol heat. It is full of flavor and intensity. I can see why there is a lot of love for this brew and I can see why some people would give it a lower rating. I really enjoyed it and it’s worth seeking out.

Poured the color of used motor oil with a light tan head which was gone quickly......aroma of booze, bourbon, molasses, licorice....taste is thick and follows the aroma, licorice, bourbon, molasses, oak, booze with a touch of heat late. It is 8F degrees outside, this works well tonight.

Bottle in Seattle. Tan head, very dark brown body, quite heavy. Roast meat on nose, soy and molasses, bourbon. Smooth and rich with very nice, spicy bite. Drinks a hair lighter than the weight suggests. Balanced molasses and soy in body. Very, very nice.

UPDATED: NOV 25, 2017 Bottle 2015: Pours a deep, near opaque black with a surprisingly dense and well retained tan head. Nice malty aroma. Chocolate, molasses, sweet vanilla bourbon and mild oak. Slick body. Some apparent alcohol, lots of sweetness upfront. Some roast and licorice in the middle with touch a hint of roast towards the back and more alcohol/booze on the finish. A big beer that lacks complexity and balance.

2012 bottle. Pours black, with a small, bubbly, brown head. Baking chocolate, earth, caramel, oak, and a touch of red wine. Very sweet and lightly bitter. Heavy body, with an oily, grainy, and harsh mouthfeel. Just decadent. Might be past its prime, though.

Pours coffee brown with a nice tan head. Aroma offers coffee, sweet, roast malt, chocolate and caramel tones. Flavor presents caramel, sweet toasted malt, chocolate and coffee notes. Mouthfeel features firm body and peppy fizz. Love your uncle - I should because I have one in North Carolina!

Vintage 2015. Pours black with a brown head. Aroma of biiig toasted malts, Cocoa powder, chocolate, vanilla, dark dried fruits and some sweet incorporated bourbon. Taste of vanilla, bourbon, Cocoa powder, soy, toasted malts, dark dried fruits and coffee. Pretty old school and nice gem here.

Bottle from 2015. Pours pitch black with a small dark brown head. Aromas of soy, toasted coconut, dark chocolate, dark fruits, vanilla. Taste has roasted malts, dark fruits, vanilla, fudge, soy, booze, dark chocolate, bitter finish.

Black pour, foamy brown pour. Aroma of chocolate and dark fruit. Flavor of rich chocolate, prune, and booze (but not as boozy as it actually is!) Rich, thick, mouthfeel. Fantastic.

Bottled. Pours deep chestnut color, tan head. Aroma is lots of bourbon, dark fruit, plum, raisin, vanilla, booze, licorice. Flavor is dark fruit, chocolate, booze, lots of plum and other dark fruit, bourbon, toffee. Solid. Nothing special.
