COMMERCIAL DESCRIPTION
This Backwoods Cyser (’size-er’: a honey wine made with apples) was made with Michigan apple cider and a blend of Michigan star thistle, buckwheat and wildflower honeys. Once fermented, we placed the cyser into bourbon barrels and aged it to taste. The finished cyser is full bodied with smooth apple-honey character. Finishes with a touch of caramel, oak and bourbon.

Appearance: clear light straw with yellow at its deepest depths. Some miniscule bubbles – hints of residual fermentation? Swirls with sticky spots.

Nose: apple flesh with a tickle of caramel. Mulled cider with whole cinnamon sticks. Raw white oak. Whispers of entwined spice and heat – nutmeg, allspice. Flambéed apple slices. Cooked honey.

Palate: sweet. Mouth-coating along the sides with pure honey fresh from the comb. Sweetest in the middle. Dry finish with cinnamon sticks and white oak. Cooked apple finishes last – sweet, spiced, flambéed, and married with oak. Vanilla caramel oak esters – warm yet cool at the same time.

Final Thoughts: quite a delight I must say. It was intriguing the additional character the oak added to the mead in a harmony as if they were meant to be. Separated by time, maybe?

Another SeaBass share. Thanks!!

A: Pours a nice pale yellow hue, nice cling to the glass.

S: Honey sweetness, with notes of oak, bourbon and slight vanilla. The apple is there, but a boozy burn stands above all.

T: Apple front and center, like stewed apples with a nice honey sweetness to back it. The barrel while not as big as the aroma plays a big role. Old worn oak, with rich Bourbon notes.

M: Medium in body, sweet with enough bourbon backing to make this one to sit down with and enjoy.

375 ml Bottle from app vintner - I love B. nektar, they do such cool thing with mead. I haven’t had anything bad from them and this is no exception. Batch #036, 04/2009. Pours a pale yellow with that smokey bourbon, vanilla oak, brown sugar, and sweet apples. Taste is sweet & smokey. Palate is sticky. Overall, yup!

I love mead. Nose is light, green apple and some bourbon and vanilla notes. Some of the aromas remind me of a moscato or sweet riesling. Almost buttery. This one pours a light yellow color. Flavors are green apple, caramel, some oak and bourbon, and a hint of buttery wine notes. Good stuff but $$$$.

Bottle. Pours a very clear light golden yellow color. Very sweet aroma of apple and honey with a boozy back end. Medium mouthfeel. Very sweet taste with the residual honey and apple notes. About midway through the bourbon makes itself known in a somewhat harsh way. The transition for me is not very smooth and goes from extremely sweet to bourbon booze. Overall, it takes me a while to drink this down. Not one of my favorite B Nektar offerings.

Chipalsa (1310) - Florida, USA - FEB 20, 2012
This mead poured a clean, yellow body. The scent was sweet and spicy; thick with honey, cherries and wood. The taste was again, honey but with a nice finish of bourbon and citrus - almost like candy this one was. Must track down some more of these.

Bottle. Aroma has notes of bourbon, apple and honey. Clear pale yellow hue. Very sweet and boozy. A great mead that will kick your ass.
