Clear light yellow colour with a small, frothy - fizzy, fair lacing, mostly diminishing, white head. Aroma is light to moderate malty, moderate hoppy, flowers, grass, honey, dry honey, floral honey, champagne brus. Flavour is moderate sweet and bitter with a long duration, pear, champagne brus, light honey, wine notes. Body is medium, texture is watery, carbonation is soft to flat. [20131111]

Clear light to medium yellow color with virtually no head. Aroma is moderate to light heavy honey, apples, flowers. Flavour is moderate to heavy sweet and moderate bitter with a long duration, hoppy, honey, tart fruit. Body is medium, texture is watery, carbonation is flat. [20140315]

Bottle on Amtrak Train 27 - The Empire Builder ( from Binny’s South Loop) - 04/11/12. Very pale yellow with a thin white head that clears to the edges and forms a small pond. Nose comprises honey and piss, light citrus, farm like, touch of horse. Tastes of sweet sugars, herbs, medicinal qualities, honey, strepsils. Medium bodied with limited carbonation leading to a sweet acrid finish. Meh ! I will admit I have only had a few meads in my time and none for a good few years but this tasted nothing like them.

The pour is a clear yellow one with a small layer of white foam. Aroma is nicely hoppy, mostly citrus notes. There is some sweet honey, nice floral aromas, tropical fruit, and sugar. Flavor has a very intense tropical character and lots of lychee. Some citrus, tons of pears, and plenty of sugary sweetness and honey.
