The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Sample @ CBC. Nice head with good duration. Color is golden. Aroma and taste are fruits, flowers, pine, citrus notes, malt and hops.

Sample at CBC 2013. Hazy amber colour with an off-white head. Aroma and flavour of hops, fruit and caramel.

madsberg (11799) - Søborg, DENMARK - MAY 7, 2013
Draught @ CBC 2013: Amber coloured. Unclear. Dense beige head. ARoma: Citrus, herbs, flowers, caramel, some pine. Flavour: PIney, caramelly, herbal, light grapy and citric. Medium to full bodied. Ends citric and piney bitter.

Benfi (692) - DENMARK - MAY 6, 2013
UPDATED: MAY 27, 2013 A golden/amber coloured pour with a medium white head on top. Hoppy, fruity, sweet aroma. Tastes fruity, hoppy, bitter and slightly sweet, some caramel too. Nice complexity in this DIPA.

Tap at CBC 2013. Pours hazy golden with an off white head. Aroma is floral, citrus and grassy. Flavor is moderate sweet and bitter. Medium bodied with soft carbonation.

Bottled from Systembolaget Hazy golden with a bubbly head. Some toffee and grassy hops along with some skunky notes. Too alcoholic flavour. Loads of resin and some grassy hops.

360 ml bottle ordered to Systembolaget in Mölndal early April, sampled on May 2, 2013.
Hazy amber color, creamy off-white head. Alcohol, herbal scent. Malty, herbal, bitter taste, also caramel. Smooth mouthfeel, medium high bitterness.
The 90 IBU’s are well hidden.

My Bottom Line:
Citrusy, grassy hops also show white pepper angles in this creamy, frugal Double IPA .

Further Personal Perceptions:
-A veil of foam covers the cloudy pale blond.
-Mouthfeel is sweeter than I would have imagined, but these sugars balance out the hop surge.
-Malts definitely are there, but are more in a supportive role (body, not necessarily flavor).
-This is a nice sipper I wouldn’t mind pairing with some curries!

Ktwse (5677) - London, Greater London, ENGLAND - APR 21, 2013
Pours murky amber with low off-white head. Lightly floral aroma of citrus, hints of apricot and mango, some caramel malt. Taste is initially very dry, with light bitterness. The bitterness gradually builds up, but is kept balanced with a light sweetness. Finish is pure bitter, though, and quite long. Body is light-ish with soft to average carbonation.
