The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japans Suruga Bay is deep (it is Japans deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Pours hazy amber orange with a medium frothy head. Aroma dry American hops, citrus. Dry bitter taste. Medium bodied. A bit more of it and it would be very nice. Not Bad.

Cloudy light orange beer. Thick, foamy head. Not a ton of aroma for how powerful the hops are, but what there is is citrusy and floral. Bitter and astringent. Sharp bitterness at the beginning that fades as the drink continues.

Bottle from brewdog.com. Tasty IPA. My fist Japanese IPA and it is rather good. Very alike the american IPAs such as stone and three floyds, just a bit less of everything, but not too much less that it isnt a tasty IPA.

UPDATED: JUN 11, 2012 330 ml bottle. Pours cloudy golden with foamy white head and lacing. Strong fresh hoppy and citrus aroma. Summer in a bottle. Wow, great well balanced citrus, bitter but not too bitter, sweetness follows but the dryness kicks in. Want another swig. This is good. Slight caramel flavour comes through. Beautiful!

Bottle from Brewdog.com. Great looking label. Dark orange pour with a middling white head. Enticing piney hop nose with some juicy tropical fruit present. Sweet caramel and hops aplenty in the flavour. Really drinkable with spot on hop bitterness. Lovely stuff. A first class DIPA, and definitely the best Japanese beer Ive had the pleasure of tasting.

Draft. A hazy golden beer with a beige head. The aroma has notes of hops, grain, and malt. The flavor is sweet with notes of malt, hay, hops, and lemons, leading to a bitter finish.

Sample at CBC. Golden hazy with a small foamy white head. Fruity sweet aroma, light malty, with citrusy notes of lime, peach, grapefruit, the lot. Very fresh hop flavor, sweet fruity, some grassy notes. Heavy bitter finish. Not exactly an imperial IPA, but extremely wellmade, crisp and refreshing.

On tap. Pours a cloudy opaque golden with a frothy and dense off-white head with good retention. Very fresh citrusy hop aroma. Medium body, a sweet peachy fruitiness with lots of hoppy bite and heavy IBUs. Imperial perhaps not so much, but all the way from Japan and still appears very fresh. 170512
