Aromas of funk reminiscent of crab apples and blue cheese. Taste starts sweet (apples and honey dew) but finishes clean and fairy dry. Definitely a fun experience. Love it! ---Rated via Beer Buddy for iPhone

Bronzed body, evanescent ring of head. Tart sour apple nose that is mostly straight forward, but with a touch of wild yeast mysteriousness. One the palate, the sour apple notes carry through. Medium-bodied and characterized by an appealing dryness. Carbonated just enough--definitely not too fizzy like many commercial ciders. Carbonation stays in the background, while contributing just enough liveliness to push forward the apple flavor. Well-balanced and full-flavored.

Bottle on the train from Florence to Roma, 26/09/16. Golden orange with a well appointed off white head that retains very well for a cider. Nose is sweet, toffee apple, moscavado sugar, apple pulp. Taste comprises sweet apple, brown sugarm caramelised apple, light hay. Medium bodied, miderate carbonation, semi drying close. Ok easy drinker for a lunchtime train ride but to sweet for me overall.

Bottle at Etto. Hazy deep golden color, big fluffy white head that settles quickly. Chunkies. Aroma of freshly baked apple pie. Taste is sweet and syrupy apples. Sweet and refreshing.

Bottle @ home. Pours with a dark golden colour, medium white head. Aroma is quite a lot fruity, apple and pears too; somewhat artificial, but enjoyable. On the contrary, taste is quite dull: not so sweet, a little bitter, not even remotely interesting. Quite a heavy body for a cider, little carb for a cider.

Bottle at Centrolina DC pours a clear gold with a ring of white head. Nose is nice, apples, apple juice, white grape, light honey, light spice. Flavor follows, strong apple juice flavor without being overly sweet, light grape, mild spice, a little bit of butter. Dry finish. Nice.

Hazy pale golden color with a small white head. Aroma of apples, skins, wood, wild yeast, blue cheese. Taste of apples, blue cheese, wood, vanilla, dry finish.

Bottle @ 10K + OT. Thanks, Andrew. Clear straw pour with a white head. Aromas of sweet honey, apple, and sugar. A hint of pineapple, some butter, and vinegar. Weird combination. The taste is kind of acetic and sour, but also quite sweet and fruity. Pear, apple, and a hint of honey. Quite buttery, though. A bit musty and mealy as well.

>> Clear white gold pour, ring of bubbles. Nose is butter, butyric, margarine, vegetable oil, odd armpit. Taste is tannic yellow apple, dry cinnamon, dusty, mild spice. Dusty finish, powdery, continuing oddities of butter. Very odd, fairly flawed for cider.

Ciders are my favorite drink right now and this one is spontaneously fermented, so it is as natural as it gets. Has a slight musty apple aroma and cloudy yellow color. Tastes like a subtle apple juice.
