COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

On tap at Stone Brewing Berlin. Comes with a light hazy golden color an d only a thin, white head with larges bubbles. Intresting nose of banana-peel, yeast, some herbst und grain. Becomes more fruity as it becomes warmer. Taste is slightly fruity, with green bananas, yeast and some very light strawberries. Rather lioght and short. Nice Saison

Heidelbeer (41) - Bielefeld, GERMANY - JAN 2, 2017
Medium sized off white almost creamy head with a average duration. Aroma is quite interesting. Red and yellow fruits, some herbal floral notes like coriander and slightly peppery. Palate is medium to thin, high carbonation and a short finish. Flavour is medium sweet, medium wheaty, orange and a little bit spicy. I’m a little bit disappointed. Not worth the 6 euro.

Clear, golden beer with good but short head. Some mango, grain and flowers & some soap on aroma. Taste is slightly fruity, with some herbs and lots of pepper. Quite good carbonation. The end is malty and includes a lot of pepper. Quite strange but nice combination. Points from natural wooden cork.
