Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Pours yellowish orange with a smooth head. Aroma of fruits, yeast, earthy notes and spices. Taste is sweet, yeasty and stuffy with some citrus and lemon. Finish is lemony, citrusy and fruity with some yeastiness. Okay.

Sample from bottle at Olutexpo 2015, Helsinki. Colour us slightly cloudy golden with small white head. Aromas and flavours: Fruits, citrus, spices, hops and malts.

A light yellow, a head is blond and almost medium. Aroma has flowery and aromatic. Sweet fruits, flowers, black pepper and some lemon. Taste has strong but mild spicyness, camomilla and lemon. Some sharp peppers in the end. There are also much more flavours then I described here but its difficult to say exactly what. Medium bodied. Maybe even too complex beer. Personal. Spicy.

Deep opalescent bright golden (5-6 EBC) with a fluffy fine poring head and very good lacings. Aromas are right away pretty complex and hits you with plenty of different impressions such as wheat, coriander, bergamot, safran, black and white pepper, floral, grassy and a touch of dried citrus peel. Soft and mild carbonation offering a smooth texture and a medium body. Spices like pepper and ginger and coriander are all over the place with a light malty touch to it all offering some light acidity and a faint bitterness. Lasting spicy finish. Pretty good beer and pretty harmonic but not really a saison as you would expect.

Sigmund (6901) - Tau, NORWAY - AUG 20, 2015
750 ml corked and waxed bottle, from Vinmonopolet, Nettbutikken. Probably 2 y.o. when consumed. ABV is 5.8%. Golden colour, lightly hazy. White head goes rapidly from moderate to none. Aroma of saison yeast, but also less pleasant notes of over-ripe and decaying fruits, moldy wet grain, compost and solvent. Fairly refreshing flavour, medium dry, a little fruit, not very complex but nice enough to drink. Less spicy than expected. Might sample again from a fresher bottle, hopefully the aroma will be better then.

Bottle from GBBF 2015 and drunk at home. Pours hazy golden lasting beige head. Slightly funky aroma with some spice. Funny having this after so many English saisons. This is a little more cereal led. Herb. A little funkier than some saisons. Decent.

Hazy yellow color with flakes floating. Aroma is fruity, citrus. Flavor is citrus, hops, grapefruit, dry finish.

(bottle 330ml) Aroma: strong fruity (orange and citrussy) notes, spicy and pepper hints. Appearance: orange color, very hazy medium-size white head with weak lacing. Taste: mainly fruity (orange and citrus flavour), pepper and spicy notes are quite strong ,medium to heavy sweetness, Dry finish with orange pill notes, Pepper/orqange pill flavour in aftertaste. Palate: light body, strong carbonation warming feel coming from alchohol or pepper. Overall: Very tasty beer, with complex taste and aroma. Its definitely worth trying.

Bottle from Systembolaget. Fruity smell with apples. Sweet and fruity taste with pale bread, spices and oranges. Clean and easy to drink. Quite sweet.
