COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Aroma of fruits, citrus and malty notes. Semi-clear golden liquid with a short lasting white head. Medium sweetness and light bitterness. Very summerly beer and easy drinkable. Average soft carbonation, a bit watery texture, medium body.

Aroma: wheat, hops, some grassy and spicy notes, wet grains. Taste: dry with some sourness and milky sweetness. Flavour: cereal flakes, some spices, light zesty and spicy notes. Good.

Pours a white, very dense head that doesnt last long. Body is very hazy, orange and of medium carbonation. Aroma is not very intense, herbal and spicy. Taste follows aroma, with some fruitness and a lasting spicy finish. Very interesting beer.

Hazy golden colour, small head that fades soon, leaving a good lace. Sour aroma of grass, fruits (pomelo?), coriander, cinnamon, pepper. Medium to light body, soft carbonation. Taste is sweet, fruity, hot, pepper, roses. Spicy and bitter finish. Great.

Hazy light yellow color with very little white head. Nice sour aroma of grass and herbs as well ass a vanilla and toffeee like sweetness. The taste is fresh and grassy I think. It has a citrussy sourness to it and a light sweetness with sourness dominating though. Low bitterness. Over all it has a unique taste too it in the balance between it all. I like it! A bit too low carbonation to my taste.

UPDATED: DEC 14, 2015 Bottle at lumskebugten. Aroma and taste is rather complex; Fresh but sweet, citrus and over-riped fruits. Coriander. Body is light to medium and texture is juicy. Very very high carbonation.

Tasty and very fruity saison with an interesting spiciness. Not as sour as the original from Belgium, but more passive and more like a wheat beer.

Pours yellowish orange with a smooth head. Aroma of fruits, yeast, earthy notes and spices. Taste is sweet, yeasty and stuffy with some citrus and lemon. Finish is lemony, citrusy and fruity with some yeastiness. Okay.
