COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

75 cl, bottled. Pours slightly hazy orange with a decent white head. Aroma: Fruits, soap, ginger, malt. Taste: Medium sweet, malty notes. Soapy tones, fruits. Wooden tones. Palate: Medium body, average carbonation. Dry finish. Not bad.

0.75 l bottle with a wine cork. (You’ll need a professional waiter’s set of small knife and cork screw to open this.) Appearance is golden, cloudy and a nice head. Taste is like a spicy white wine. Yep, this is some Italian beer style not yet recognized by Ratebeer or any else. Quite spicy really. I had some chili nuts with this which was not the best combination. Ingredients are (translated by me) barley malts, farro (Italian spelt), wheat malts, wheat, sorghum, rye, water, hops, orange peels, pepper, coriander, bergamot, camomile, gentiana (used in angostura bitters), sugar and yeast. Very Italian ale and great also.

33cl-fles bij Nathan thuis. Merci! U: Helder goudblond met dunne witte schuimkraag. G: Kaneel, kruiden, pilsmout en gist. S: Zeer zoete aanzet, fruitig, wat kruiden en licht bittere afdronk. Voor mij is dit geen saison. M: Medium carbonatie en medium body

Keg at Baladdin, Bologna. A nice translucent golden orange coloured pour with a lasting frothy white head. Aroma is fresh orange tangerine, wit yeast, orange rind, wheat, Palate is semi sweet, moderate carbonation, a little flabby. Flavour is composed of spicy orange peel, cinnamon mellow saison yeast, little perfume. Ok saison.

Alla spina. Colore giallo intenso, quasi ambrato, torbido. Schiuma bianca, fine, poco abbondante e poco persistente. Aroma decisamente speziato, gradevole. Soprattutto pepe rosa, leggermente balsamico e miele. GUSTO: prevalentemente speziato e mieloso, con una punta di acidulo note di agrumi. Amaro assente, anzi una nota mielosa di dolce che, insieme alle altre spezie, rende la birra non scontata. Carbonizzazione bassa. Molto dissetante adatta al caldo e hai climi estivi.

Tap @ Fermentoren, Aarhus. Pours clear amber with a small white head. Aromas of rye, soap, esters, spice. Taste is light tart, soapy, spicy, citrussy, lemony.

On tap at Fermentoren Aarhus. Pours a light golden with a big white head. Aroma has lots of spices like coriander seeds, bay leaves, cinnamon and a slight acidity. Taste is surprisingly sour and again with lots of dry spices. Average carbonation and a medium oily body.

Beautiful unfilttered orange appearance. Cinnamon, canel and peach and fruits. Palate is quite light. Pleasant and drinkable.

heavy (2904) - Split, CROATIA - JUL 18, 2016
Jun ’16. A 0.75 l corked/waxed bottle. It poured a bit hazy yellow body with medium to big head. Quite weird, but fine aroma. Apple, peach, coriander, elderflower, regular mineral water, hint of something similar to a cheap citrus radler, but blended quite nicely here with all the components. Flavor was lightly bitter, also, as it got warmer very peppery (most realistic black pepper I’ve ever encountered in a beer) leaving the long hot aftertaste. Every new sip helped it to go away for the new lighter flavors to show up. Light malty sweetness was biscuity, chalky, floral with a hint of cucumbers, coriander, other spices, sunflower seeds. That said, it’s obvious couple of sips can’t be enough to really understand this one in its full complexity. And it’s so weird. Thinner in body, believe it or not after all, smooth (oats I guess), mineral water in the finish as well, besides aforementioned pepper. Wow, this was probably one of the most twisted beers ever, but I enjoyed every bit of it. Extreme complexity for the little ABV, luckily, not another "praised" bland saison. I’m in love with this brewery!
