COMMERCIAL DESCRIPTION
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity).
This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.

On tap at Open Baladin, 2013 vintage. Deep mahogany color, no head. Aroma has lots of dark fruits: raisins, dates, figs. Also sherry, fruit liquor, wood, booze. Taste is sweet, fruity with raisins, toffee, burnt sugar, creme brulee crust, bitter dark cherries on the finish. Medium body, sticky, syrupy mouthfeel. Complex, elegant and tasty.

Poured reddish-brown in the glass, serene and flat.The aroma is a warning that this is going to be an unusual beer-- it's sweet and reminiscent of raisins and figs but also textural and rich...wood, earth, tobacco, whatever. Tastes like dried fruits, nuts, caramel and toasted bread. There was no hop presence on the way down. In a blind tasting I would mistake it for a tawny port wine. A truly experimental beer I am glad I tried.

Aromat: słodki, wykwintny, rodzynki, karmel, kandyzowane owoce, figi, daktyle, lekkie nuty półsłodkiego białego wina. Dużo ciemnych owoców. Wygląd: pięknie miedziane, czyste, przejrzyste, całkowicie pozbawione piany. Smak: słodkie i likierowe, karmel, toffi, rodzynki, figi i daktyle, sporo ciemnych i czerwonych świeżych owoców dodających nieco temu piwu lekkości, są słodkie czerwone i białe winogrona. Bardzo gładkie, aksamitne i wykwintne, syropowe i słodkie ale w taki przyjemny sposób. Świetne do powolnego sączenia. Odczucie: bardzo pełne, gładkie, aksamitne, wyklejające, pozbawione praktycznie wysycenia, świetnie ułożone, alkoholu w ogóle nie czuć, na finiszu rodzynkowa słodycz. Pozostawia świetny likierowy posmak. Całość: Świetne, wykwintne, słodkie piwo, bogate i świetnie skomponowane. Słodycz kandyzowanych i świeżych słodkich owoców. Bardzo szlachetne, uderza wręcz swa delikatną strukturą, bogate posmaki owocowe i likierowe. Bardzo dobre. 8/4/8/5/18

Got this beer from drankgigant.nl. Label says 2013, 14% alcohol. There is absolutely nothing to dislike about this beer...but. A bit complex, maybe a little to sweet at first, but fine after a few sips...but. Reminds my strongly of a toned down tawny port. Alcohol well hidden, but hits you hard. Personally i would like to see a higher ABV in this, or maybe i should just open a cheap bottle of desert port. I think a higher ABV would make it even better, but thats personal taste....but. Here is the but: the price of the 0,5L bottle also hit me hard (32,95 Euro). However, this is great, great stuff. I'm sure i will buy again.

Bottle. Dark chestnut with ruby sparklings, little bit hazy and completely flat. Strong and solid aromas of figs, raisins and vin santo with significant notes of wood, vanilla, dark sugar and a bit of caramel. Complex and changing while warming. Thick syrup, full body with oily and sticky mouthfeel. Sweet start balanced with slightly alcohol spicy and warming finish. Anyway well balanced and dangerously drinkable. F**king good but also expensive.
