A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006. Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity). Etichetta Oro Golden label This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.
It can be accurately compared to a drawing-room sherry.

Qui il confine tra birra e vino (passito) è veramente labile, zero schiuma, marroncina, aroma fantastico di frutti maturi esotici, cosi come il sapore, datteri uvetta e molto altro ancora, incredibilmente complessa!

Sandy red pour with no head. Very sweet. Mouth is light but almost has the feel of syrup. Huge walnut notes. Some aroma of alcohol. Some sugar. Lots of sweentess. Caramel, maple syrup. Way too sweet. No hops are present. This is not a beer, but did taste pretty good.

Bottle thanks to bu11zeye. The color of the beer is amber, clear, and not much head. the smell is great, sweet, toffee, alcohol, and malt. The taste is sweet, toffee, alcohol, dark fruits, and good.

Bottle. Amber colour with a small off-white head. Aroma is raisin, alcohol, dried fruits. Flavour is sweet, raisin, alcohol, dried fruits, malt. Very nice beer.

Bottle. Thanks Craig. Cloudy brown with little no head. Aroma of chocolate and marzipan, sherry, possible oxidation. Yasye of chocolate brownie, tootsie roll, sherry fruitiness. Nice sweetness. Delish.

In bottle, thanks Craig. Pours a golden brown colour with a lacy light tan colour with no head. Aroma of raisins, Christmas cake, alcohol, coconut, chocolate and caramel. Similar flavours with mild carbonation and an oily mouth-feel. Alcohol is quite prominent with lingering coconut, honey and alcohol again. Lovely.

Pour is dark reddish brown with virtually no head. Tons of sweet stale caramel in the nose, heavy on the alcohol with strong cardboard towards the back. Taste is big time sweetness with lots of dark fruits and notes of chocolate. Very syrupy with light heat, creamy feel and low carbonation.

Pours clear deep amber with small off-white bubbles. Aroma has notes of alcohol, raisin, plums and dried fruits. Taste is heavy sweet and light bitter with a long raisin and dried fruity finish. Body is full, texture is oily, carbonation is flat.

Bottle, courtesy of Meilby. Pours deep amber with some tiny off-white bubbles. Aroma of malt, caramel, some alcohol, raisins, prunes and oxidized malt. Flavor is sweet malt and raisins with some dried fruits, oxidized malt, plumes and warming alcohol. Full body, sof carbonation.
