A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006. Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity). Etichetta Oro Golden label This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.
It can be accurately compared to a drawing-room sherry.

Bottle shared with friends! Poured a clear reddish amber with a no head whatsoever. Aroma was full of earthy grains and caramel with a quite nice backing port note that was relatively strong. Flavor was similar with smooth sweet caramel and a nice backing of sweet grains and a nice port note.

Thanks Manuele! ’04 bottle. Tepid red/nut brown, thinnest large bubbled white gravity ring. Severe oxidation throughout this, but it takes on an interesting character, almost fruit candy-like. Nose is caramel, light wood, and newspaper. Flavor has cherry and apple, a light toast, and heavy hard-candy sugar in the finish. Thinnest body. Some might dislike this strongly and complain of tooth decay, but I found it interesting.

A wee nip from Craig Garvie’s 2005 bottle, Pours a clear brown with no head Nose is slightly boozy but notes of dark brown sugar also present. First sip is smooth and sherry like. Finish is sweet. Very interesting interpretation.

Bottle. Pours an amber body slightly darker than the oro with light bubbly head. Aromatically sweet and fruity similar to the oro. Honey and citrus, with a lightly boozy orange peel body and a sugary sweetness. Boozy honey a bit waxy with light oxidation fruit tones. Not all that good and i enjoyed the oro more.

Botella. Versión dos mil seis. Hazy deep brown colour. Very sweet caramel dark fruity aroma with plenty of alcohol. Thick mouthfeel. Quite sweet a flavour with well toasted caramel and dark fruit along with alcohol. Way too sweet.

Bottle 2006 with courtesy of Papsø at Papsø tasting, its very appreciated! :) Pours an mahogany colour with no head. It has a vinous aroma with notes of dark fruits, caramel and madeira. Flavour is also vinous, sweet and port-madeira dominated with notes of dark fruit, caramel, nuts and plumes. Would love to taste this again.

Bottled. An amber beer with no head. The aroma has notes of malt, caramel, alcohol, and oxidation. The flavor is sweet with notes of alcohol, malt, and caramel, leading to a dry and alcoholic finish.

Cloudy amber with no head. Aroma was boozy with overripe fruit, caramel and toasted malt. Boozy flavor with toasted malt, caramel, rice and overripe fruits. Reminded me of a Sake.

Clear medium amber color with virtually none head. Aroma is moderate to heavy malty, caramel, oxidide, light alcohol. Initial flavor is moderate to heavy sweet and bitter, finish flavor is moderate to heavy sweet and moderate bitter with a long duration, overripped fruit, dried fruit, old fruit. Body is medium full, texture is oily and sticky, carbonation is soft to flat, finish feel is light to moderate alcoholic. [20110223]

Bottle at Papsø’s - Thanks. Clear red/brown - white head. Sweetness, roasted, berries, oxidation, licorice, honey, nutty, light dusty, citrus, sticky body. Lovely - it works !!
