A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when its time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006. Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teos objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Heres how Teos system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when its time to bottle (it all depends upon the oxidation velocity). Etichetta Oro Golden label This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.
It can be accurately compared to a drawing-room sherry.

Bottle at Paps. Cloudy orange coloured with a small off-white head. Sweet aroma of caramel, dried fruits, marzipan and alcohol. Sweet flavour of caramel, dried fruits, cookies and marzipan with notes of alcohol. Sweet finish.

bottle at paps clear amber, no head bitter caramelly aroma, slighty oxidized, pretty complex, quite malty. dark aroma.. very sweet flavor, very thick mouthfeel, flavor is sweet malts, sweet plums, cosidering the abv, alc. is well hidden, very nice.

Bottle 50 cl. Pours a hazy reddish amber with hardly any head. Lovely caramel aroma combined with overripe fruits. Very solid body, close to flat, oxidized caramel, overripe fruit and a warming alcohol finish. Lovely if not entirely as complex as the Golden. 230211

UPDATED: MAY 7, 2011 7 May 2011, bottle at one of cgarvieuks legendary tastings. light amber, clear and looks syrupy. slightly sherry but a very sweet sherry and not very nutty. med/full body and very syrupy. gorgeous. sweet, sugary. sherry. amazing! original rating = 7, 3, 7, 4, 13 = 3.4) amber colour, clear w/ no bubbles wow! like a nutty barley wine, almost some sherry influence on the nose. full body, like syrup. really coats your mouth. very rich! tastes like a sweet sherry. like an after dinner dram of whisky (at least, thats how i could drink this!) great but not for all the time.

Bottled @ tasting cgarvieuk. Amber colour, no head. Aroma of caramel malts, brown sugar, sherry. Flavour is very sweet malts and spices, similar to muscatel wine, brown sugar. This makes an excellent dessert drink.

UPDATED: DEC 18, 2010 Bottle. Pours caramel brown. Nose of toffee, honey, buttered bread, tea leaves, oak and dark fruits. Taste is honey and toffee which gives way to light tea body, dark fruits and warming alcohol, which is followed by a long raw sweet honey finish.

500ml Bottle: Complex, very sweet aroma of bread crust, malt, light dark ripe fruit, raisins, honey, figs, plums, slight wood, and light tobacco. Poured brown/magenta in color with no head. Opaque. Not sparkling. Flavor is heavily sweet. Tastes of honey, malt, raisins, figs, plums, slight wood, slight tobacco, and a hint of alcohol. Full body. Oily, slick, smooth texture. Soft carbonation. Honey, malt, raisin, fig, plum, finish. 13.5%ABV is completely hidden throughout.
