A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006. Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity). Etichetta Oro Golden label This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.
It can be accurately compared to a drawing-room sherry.

Bottle from Healthy Spirits. Pours reddish brown with no head at all and a vinous oaky aroma. There is a sweet fruity flavor with vanilla and a warming alcohol trail. This is a very delicous sherry-like brew.

Bottle share by Marcus. Pours dark amber with no head. Aroma is sweet, vinous and a bit of oak. Full bodied. Flavor is like drinking booze - in a thick sweet way. Tho it’s malty sweet, it’s still vinous. It’s mouthsmacking, warming and a touch smokey. A treat.

Pours light hazy brown amber with no head. Aroma is complex with alcohol, figs, fat caramel toffee, port, plums, light oak, overripe red apples, light earthy malts notes. Almost completely flat. Quite oily but not terribly sticky. Flavour is mildly sweet, raisins, plums, figs, fat caramel. Vinious (naturally). There is a mild grainy oaky feel to it, like milky chocolate or cocoa nibs. Long, lingering, mild dry sherry note at the end. Great sherry-like Barley Wine.

All’Altrimenti Braceria, al bicchiere, servita con cantucci alle mandorle in accompagnamento a brownies con crema inglese. Diversissima dalla X-Fumè che avevo assaggiato un mesetto fa, che avevo preferito; ha un colore più chiaro e opaco, mentre il sapore è più secco, astringente, e ricorda uno sherry, con un acidulo prepotente. è un eccezionale passito di birra, l’abbinamento con cantucci/dolci secchi è la morte sua.

Pours deep caramel with no head. Nose is subtle with an interesting cider aroma. Totally different flavor with caramel, toffee, dried fruit and a swerve finish.

Bottle: Poured a burnt coppery orange with no to a couple bubble head, Aroma is that of sherry and aged fermented fruits. The taste is very bold and aged fruit, lively on the tongue, with a nice sherry style alcohol flavor.

Bottle. Pours a clear amber color with no head. Has a sweetish malty caramel aroma. Sweetish malty caramel and dark fruit flavor with some earthy hints. Has a sweetish malty caramel finish with hints of dark fruit.

The Xyauyù Ultimate Tasting

Darker shade of amber, darker than the Gold and Copper versions; flat. Aroma of caramel, alcohol, with a medium intensity oxidisation; evident fruity touch (raisins), like a Pedro Ximenez, and an edge of bitter almonds and wood; therefore more vinous than honeyish, compared to the Copper. Extremely sweet malt flavor, syrupy caramel; there is a nutty touch that is better integrated than in the less oxidized versions. The final is sweet. Very good, definitively better than the Gold, comparable to the Copper, but just a shade less interesting.

Dark amber color, brighter than the Gold. Light malt aroma. Sweet caramel and malt flavor, oxidized, with high alcohol perception. Low bitterness. Unimpressive.
