A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006. Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity). Etichetta Oro Golden label This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.
It can be accurately compared to a drawing-room sherry.

Qui il confine tra birra e vino (passito) è veramente labile, zero schiuma, marroncina, aroma fantastico di frutti maturi esotici, cosi come il sapore, datteri uvetta e molto altro ancora, incredibilmente complessa!

Bottle. (Silver label, bottled 2007.). It pours a clear, golden body completely lacking head and carbonation. Alcohol, raisins, sherry, oxidation and some caramel in the wonderfully complex aroma. Probably much more, but got completely lost and forgot to take more notes. The same goes for the flavor, which is sweet and raisiny, with some oxidation, blue grapes and a hint of honey. And alcohol of course. It’s flat, full-bodied and warming in the mouth, finishing sweet and warming. A wonderful, vinous and very complex beer. Give me this over any spirit any time. (090529)

Bottle from Healthy Spirits. Pours reddish brown with no head at all and a vinous oaky aroma. There is a sweet fruity flavor with vanilla and a warming alcohol trail. This is a very delicous sherry-like brew.

UPDATED: SEP 3, 2012 750 ml bottle, 2007 vintage, sampled in 2009. Clear amber body with no head. Strong aroma of dry fruit like prunes and raisins, caramel and warming alcohol like sherry. Flavor is as expected from aroma, super sweet with dry fruit and caramel balancing perfect on a hot alcoholic edge, not sticky, not boozy, just delicious. Sweet and vinous in aftertaste with a hint of oxidation. Lovely.

Ruby colour with no head. Aroma is raisins, caramel, sherry. Sticky mouthfeel, sweet on the palate. Taste is raisins, brown sugar, caramel, honey. Sweet and delicious.

2006 bottle. Flavr dark brown with orange tints. Nose of chocolate, caramel, sherry. Big flavors of caramel, molasses, treacle, stewed fruit. Ethereal body, light and silky. Wonderful mouth feel. Light tartness. Great.

2006 Bottle - Thanks Sam! - Second bottle opened in our Xyauyu vertical...Pours is still, deep orange with no head...aroma is caramel, sherry, sweet fruit...flavour was the best of all three, rich carmelized sugar, cream sherry, thick palate, once again, the alcohol cuts the malt to an enjoyable level...terrific...
