COMMERCIAL DESCRIPTION
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity).
This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.

500 ml bottle. Vintage 2011. Pours a dark amber colour without a head. Looks like a wine. Viscosity is just about right. Aroma of sweet bready malts, some red berries, nettles and grass. Flavour of rich sweet maltiness, bread, red berries, red wine, green apples and wooden tartness. Full bodied. Very rich. A dessert. Elegant.

Aroma has liquorice, woody tones, porto and caramel. Totally flat palate. Flavour is woody with sweet caramel tones, alcohol, toffee, porto, raisins, plums and some barley tones. Very rich, very porto and very, very sweet. Nice slow sipper, I’d love to have one for dessert. But only if I had 3 hours to finish the bottle.

Bottle. 2004 vintage according to the label. Hazy ruby with no head and lots of floaties. Drinks more like some type of liqueor. Thin and sticky. Lots of dark fruit, burnt sugar, caramel and butterscotch. Seems to have held up pretty well over time. Alcohol is incredibly well-integrated. Awesome but I'd like to compare it to something with a little less age on it.

[6486-20140708] Bottle. Buttered toasted bread aroma. Clear, dark brown body with no lasting head. Sweet toasted grains and syrup saucy flavour with a sweet roasted toffee aftertaste. Full body. Really interesting. (7/3/9-/4/15) 3.8

Picked this up at Binny’s in Chicago. Split 2 ways @ 45F and allowed to warm. Expected this to be flat and it is but that’s no surprise. Dark brown, looks like burnt molasses and brown sugar and maple syrup. Smells like oaky, syrup, wood with a lot of fig and prune and booze. really smells fantastic. Oily mouthfeel. loads of booze rum, port wine and bourbon. lots of vanilla, straight up prune juice. sweet burnt sugar. Lovely!

2009 Vintage on the bottle. Bought this at Binny’s in Chicago. I think it was $45. Split 3 ways on AirForceHops’ 2700th rate!!!!

A - The most sherry / port looking beer. Lots of mahogany and blood red. Totally still, great clarity but no head / bubbles at all.

S - Nose is really awesome. It has that super insane caramelized sugar due to that very long boil. Tobacco, bay leaves, hearty fruit cake.

T - This is incredibly sweet but not overpowering or like I can’t finish a glass but in this maple syrup drizzled on biscotti with capers and dried figs put into a blender with a dash of vanilla, cocoa and horse antlers. wow.

M - Very thin, very slick, oily and the booze is not overpowering, nor do oak tannins totally overwhelm.

O - It’s great that it’s flat, it’s oily. The touch of child tears and zebra snot really pull it together. Let’s keep this up, babies.

Bottle at Craig’s. Thanks Craig. Dark amber brown. fruity caramel toffee aroma, slightly spiced. Similar taste, fruity spiced malt. cookie dough. Faltered and sweet. Very nice and balanced. Prefer to the the silver.

Bottle at Craig’s. Cheers hammy! Pours clear copper with no head. Aromas of amontidallo (sp?) sherry. Rich, fruit cake. Taste is more and more. Nice.

2007 Bottle at Craig’s. Pours clear dark brown with no head. Aromas are brandy, sherry, whisky, dried fruit. Sweet, boozy fruity taste. Oily texture. Full bodied. Finishes sweet. Very nice.

Sampled v2011 from bottle at Open Baladin, Rome. Dark amber-copper color with no head. Sweet malty, fruity-wineous, raisins and spicy aroma. Taste is like the aroma, sweet malty, sweet fruity wineous, cinammon spicy. Medium oily-sticky body, flat.
