A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity).
This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.

Bottle shared by jackl at the C’Ville Foxy Knoxy tasting. Slightly hazy copper, no head. Aroma of caramel, toffee, dark fruit, mild oxidation. The taste is toffee, caramel, raisin, wood. Medium bodied, low carbonation, boozy, well oxidized.

Bottle @ The Baby Leopard Tasting. Slightly hazy deep amber with a small head. Nose of spritzy mandarin orange, plum and peach. Cherry skin and banana bread. Taste of apple crisp. Honey. Trail mix. Hot, sweet, fun.

Bottle from Systembolaget, I think that I bought the bottle in 2013. Vintage 2009. Slightly hazy reddish/brown with no head. Sweet aroma of honey, toffee, dried fruit and some sherry. The taste was really sweet but nice. Dried fruit, toffee, vanilla, malt, oak and plum. The body was full and the aftertaste long and with warming alcohol. An elegant and interesting beer. Well done, mille grazie!

Aromat: mega intensywny i złożony. Winny (sherry, porto), wyraźnie alkoholowy, estrowy (wiśnie, śliwki), słodki, miodowy, wręcz gęsty. Karmel, chleb, nieco chmielu ziołowego. Barwa ciemno czerwona, rubinowa, klarowna - śliczna. Piana grubo pęcherzykowa, niewielka i natychmiast opadająca, jednak przy takiej mocy to nie dziwne. Smak: mega słodycz przypominająca miód pitny. Mimo tego dość delikatne. Alkohol wyraźnie obecny, ale dopiero po 2-3 łyku. Angielskie barley wine z nutami karmelowymi, chlebowymi, chmielowymi. Klasyczne, ale s tuningowane do oporu. Niewielka goryczka, delikatna i krótka. Wyraźnie oleista (w smaku wręcz likierowa) konsystencja. Tęga pełnia, praktycznie zerowe wysycenie, lekko szczypiące odczucie w ustach i wyraźnie alkoholowy, rozgrzewający przełyk finisz. Jest to jednak bardzo przyjemne odczucie. Jedno z najbardziej legendarnych piw europejskich, potwierdza swoją klasę. Koszt w złotówkach spory (najdroższe piwo jakie kupiłem), ale to naprawdę coś. Warto...

olio (10469) - Tampere, FINLAND - FEB 28, 2015
50 cl bottle (14.5% abv).
Pours dark red color with a small head. Very vinous and woody aroma, some caramel, vinous notes, mild strawberries and chocolate. Caramel and toffee on the flavor, sweet molasses, chocolate and faint hops. Very easy on the mouth, deceptive actually, .

lusikka (7819) - Tampere, FINLAND - FEB 28, 2015
500 ml bottle. Vintage 2011. Pours a dark amber colour without a head. Looks like a wine. Viscosity is just about right. Aroma of sweet bready malts, some red berries, nettles and grass. Flavour of rich sweet maltiness, bread, red berries, red wine, green apples and wooden tartness. Full bodied. Very rich. A dessert. Elegant.

Aroma has liquorice, woody tones, porto and caramel. Totally flat palate. Flavour is woody with sweet caramel tones, alcohol, toffee, porto, raisins, plums and some barley tones. Very rich, very porto and very, very sweet. Nice slow sipper, I’d love to have one for dessert. But only if I had 3 hours to finish the bottle.
