A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo’s system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it’s time to bottle (it all depends upon the oxidation velocity).
This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.

Bottle 500ml.

Clear medium to dark amber colour with virtually none head. Aroma is heavy malty, caramel, alcohol - rum, sweet alcohol, sweet dried fruit, wood. Flavour is light heavy sweet with a long duration, sugary dried fruit, alcohol, warm alcohol, rum - madera, sweet alcohol - rum, caramel. Very complex and balanced. Body is medium, texture is oily and smooth, carbonation is flat, finish feel is light to moderate alcoholic. [20121217]

[ Vintage 2007 ]. Clear medium amber color with virtually none head. Aroma is moderate to heavy malty, wood, tobbaco, oxidide malt, moderate to heavy alcohol. Flavor is moderate to heavy sweet and moderate bitter with a long duration, wood, alcohol. Body is medium to full, texture is oily, carbonation is soft. [20100602]

Clear medium orange amber color with a small, fizzy, virtually none lacing, fully diminishing, off-white to white head. Aroma is moderate to heavy malty, caramel, berry, raisin, plum, wood, alcohol. Flavor is heavy sweet and bitter with a long duration. Body is medium to full, texture is syrupy - oily, carbonation is flat flat, finish feel is moderate to light heavy alcohlic. [20090321]

37.5 cL bottle, gold. Pours hazy orange with a diminished off-white head. Dense, roasted and spiced aroma. Sweet, dense oxidised malty and roasted. Distinct solid hoppy and oxidised flavoured. Sweet and sticky caramelish flavoured. Dense and syrupy. Solid sweet caramelish base flavoured. Lovely but clearly demanding!

Bottled - vintage 2005. A red amber beer with no head. The aroma has notes of oxidation, over ripe fruits, spices, and Sherry. The flavor is very sweet with strong notes of over ripe fruits, Sherry, and caramel sauce as well as medium notes of alcohol and light notes of spices, leading to a sweet finish where the notes of alcohol, caramel, and oxidation lasts for a long time. Thanks Mike for this treat for my birthday.

Bottle. Pours a dark amber color with no head. Has a sweetish malty dark fruit and caramel aroma with hints of candy sugar. Sweetish malty caramel, chocolate and dark fruit flavor. Has a sweetish malty caramel finish with hints of dark fruit in the aftertaste.

Bottled (2nd CS/ES Beer Gathering, thanks S.V.!). Deep copper colour with no head at all. Aroma is malty, fruity and a bunch of raisins/plum along with sweet wooden notes as well as some chocolate and alcohol. Flavour is cherries, chocoalte, mild raisins, some toasted notes as well as toffee and mild plum. Wellbalanced and nice!

Bottled. Deep ruby, no head. Aroma of madeira as well as soy sauce, like SA Triple Bock. Very sweet and hugely full bodied with viscous mouthfeel. Very intense. Meady menthe, intensely warming sherry. Faint notes of coffee. On some sort of edge between overly sweet and fantastic. This beer certainly grabs your attention.

4th June 2010. Bottle in the Bir & Fud Restaurant - huge thanks to the owners for this bottle on the house! Clear dark amber beer, zero head. Sherry like nose. Light soft palate. Delicious sherryish malt, sweet and smooth and a little fruity. A little warmth in the finish. A very very fine sherry!! And a remarkable beer. Light and very fine - very well done Baladin!

Intense aroma of overripe fruit and honey - almost mead-like in character with the alcohol already showing in the nose. Very full-bodied, completely flat, intense accents of nuts, caramel flower pollen and overripe fruit - perhaps a little licorice also. Bottle 50 cl. RBESG Rome 2010. Clear, amber golden with no head whatsoever. I didn’t find the aroma all that enticing at first - almost rotten actually - but with a little time the beer really opened up revealing pleasant and VERY oxidizid Sherry notes, wood and sweet tobacco. Very full-bodied, completely flat with a massive alcohol - like vintage Sake. Lots of oxidized woody flavours and sweet - almost sticky - caramel. Very warming alcohol in the finish. Amazingly sophisticated. 020610
