The first beer released is the Wattle Seed Ale, which starts with a blend of Australian and European malts, creating a rich flavour base of caramel with a hint of chocolate. The smooth malt flavours are lightly hopped and then infused with roasted Wattle Seed, bringing a unique and authentic Australian flavour to this fine red ale. The result is an outstanding ale that boasts a smooth taste profile balancing its robust character, an ultimately rewarding yet distinctive beer. Native Range. Shady copper color, white head. Sweet, grainy, malty buttery, roasted scent, some banana. Roasted, malty, sweet taste. Medium mouthfeel. Medium bitterness.

355 simply guised as Baron’s Black Wattle Original Ale. (new entry?) Pour is clear red with a yellowish, creamy head. Pretty fizzy. Good retention and little to no lace. Aroma is roasted nuts, brown sugar, cinnamon, almonds. Taste is rich, roasted walnuts, chestnuts, some slight chemicals, vanilla extract. Palate is a bit oily to numbing.

Bottle. Pours brown with a thin head. Sweet malt aroma with toasted grain. The flavor is sweet and almost bready, with caramel, toast, and a hint of earthiness. I expected this to be a trainwreck but it was actually pretty good and very drinkable.

Tap at HDG. Brown coloured beer with a sweet malty aroma. Light caramelly backing notes. Toasted malt, brown sugar and a touch of maple sweetness. Nice caramelly maltiness. Fairly sweet with a bit of herbal bitterness. Malts seem decocted and have a vaguely dunkel-ish quality to them that is tough to describe. Nutty finish. Decent brew.

12oz Bottle Pours out a hazy dark amber topped with a small off white head. Aroma of rich malt and some sweetness. Tast of thick malt and I would guess some wattle seed. A nice touch of sweet chocolate.

Tallahassee, Fl. - Publix Supermarkets - 12 oz bottle. Pours a medium copper that sports a somewhat quickly fading off-white head. Pleasant, earthy aroma with hints of mild licorice, baker’s chocolate. Nutty flavor, some earthiness, caramel, and just a hint of chocolate. Mouthfeel is on the thin side - but crisp enough. Pleasantly suprised - glad, because I bought a whole six!

Fizzy, off-white head with a clear amber colored body. Aromas of sweet malts and some soy sauce. Taste of sweet barely that is easy to sip. A bit biscuity. I don’t know what a wattle seed is or tastes like, but this beer reminds me of Fat Tire. Fizzy mouth with the viscosity of water.
