UPDATED: JAN 17, 2008 Stunning dark amber in the glass, with a off white head. Aroma is a little caramel, and some english hops. Great malt character, unique (not sure if its the wattle), the chocolate malt is balanced in there well. Moderate hop bitterness, and the flavour of perhaps some fuggles.
The finish is a touch metallic and bitter. Overall, a very good beer. Hope to try some more from this brewer.

New in Tampa. The aroma is very nice with floral notes, lots of toasty malt, caramel, fruityness and hints of classic english brown ale nutty notes. The body is a bright and clear brown/amber and holds a diminshing tan head that leaves clingy lace. Big caramel and fruit in the first sip. Muted cocoa/chocolate through the middle. The finish is dry, but fruity with toasted nutty notes. This is pretty damn good. There must be a lot of great beers in Australia for this to have such a ho-hum rating. ’Pours a sparkling mahogany, shimmers in the light with little in the way of visible carbonation. A thick, creamy off-white pad dons it, keeps there, laces very nicely down the glass. Tops for presentation.
Aroma:- Liquefied tar, rich and bitter dark chocolate, a little vegemite and some lighter milk chocolate notes - very silky, slick, full. Pasty yet oily mix of malts on the palate - wattle seeds? - smooth and full enough in body and flavour for charm. Skin-on almonds, roasted hazelnuts, biscuity, cocoa; very gently astringent on the swallow like twiggy tree bark. All these flavours are typical of Acacia tree seeds, so there addition to a dark ale is questionable, though it works. I really am liking this. Woody and peaty, light ash swallow with more chocolaty malts. Good roundness of flavour, lingers long, nice balance and presence. One I’ll definitely try again.’ (33cL, Cellarbrations Guildford)
Pours a clear amber brown. Some crème head. Nose is slightly sweet and a bit bitter at the same time. I have never had anything with wattle seed before, so what the hell do I know. Flavor is pretty distinct, and I can only assume that it is aided by the seed. Besides that though, there is a great slightly roasted aspect to it that puts it one step above the mass of horrid herbed/spiced beers. It gives a nice hearty and robust experience. Feel has a great level of carbonation to it and a well bodied liquid feel. After seeing the low scores on this one, I had equally high hopes. But I have to say I was pretty surprised by this one. I think it is very drinkable and has a lot of positive qualities about it. Well worth trying. When drinking this one, I feel like I am having a real beer, and not just some gimmick piece of crap. 12oz bottle poured into a shaker. BBWSWSA pours dark red to light brown. The head is medium-sized. The aroma is almost nutty but not quite. I suppose it is wattle. There’s also some malty caramel. The flavor follows the aroma. It is caramel, roasted nut shells, dried grasses and malt. This is interesting and worth a try but not something that I’d actively seek out. I’m giving it ood impression points for its unique taste. The body is a little on hte heavy side of medium and the there seems to be an oily consistency to it.

Nice choclatey smell. This is quite a smooth beer, full flavoured, with hints of chocolate, coffee and nuts. I am curious as to which elements are a result of the wattle seed. Deep copper-amber. Medium body; moderate carbonation. Rich and sweet caramel flavor. Malts also carried notes of toast and rye-like grains. Lesser notes of chocolate and coffee. Pours an amber shade of garnet with a small ring of white foam. The nose has a textbook English strong ale aroma. Nutty roasted caramel, almonds, toffee and just the slightest hint of chocolate. The taste is somewhat unique with the wattle seeds giving its own brand of roasted nuttiness. This is very smooth, with some figgy fruitiness, toffee sweetness and just the right amount of minerality in the water. Well done, unique and interesting. Unique taste or superfluous curiosity? I thank brother Jer for the gift case for Christmas--as asked for, this is something I had not come across in NJ... a darker malty brown semi-transparent body with a simmering off-white head that resembles iced tea in its presence... first nasal impressions are perfumy, with soft esthers as unale-like as could be... in fact, the "wattle" in the scent is as unique in a beer as I have had! Medium to full-bodied ale that has a nice body, substantial but not heavy, drinkable but not watery... malts well in the mouth and presents some hints of sweeter sugar--no hop in this (is that supplanted by the wattle?)... quite a sessionable brew that requires a bit of concentration in its enjoyment... of the four selections in its case, Barons Wattleseed scores major points for being crisp without sacrificing body and having balance in its smooth flavor... again, thanks, brother Jer!
