Bottle. Pours the murky, muddy color of river silt, the big pock-marked head a boiling cauldron of pale tan. The nose belies the high gravity ... thick with cooked sugar. This drinks with a ruddy, woody, nutty character up front, the finish giving an odd twist, perhaps due to the unique choice of yeast. Definitely a sipper. Bottle. Very dark brown pour, almost seal brown in color. Short, spotty, tan foam ring of bubbles on the surface. Aroma is hoppy with strong caramel notes, chewy malt, fruit and grains. Taste is grains, caramel, sweet malt, citrus, dark fruit notes and booze. Body is medium, but a soft medium. Light, bubbly carbonation and a mild alcoholic warmth round the body is this one out. Appearance almost clear, amber with medium light top. 4-
Flavor and Palate : medium plus bodied. Warmth, hop with slight barrel feel. Soft walls. Chewy textures. Hop elements secondary. Pleasant, interesting effect of sake yeast being used.
Hits the style, but gets there interesting enough. FIrst a lot of cereal in the mouth, with booze behind it. The sake yeast is not distinguishable. 22 oz bottle. Just clear maroon brown, stray foam clings to the edges. Nose is spoiled fruit, dates, Robitussin and apple butter. Watery medium light with faint, flabby carb. Taste is candy apple, plum and bitter grass. More bitter with grapefruit peel and alcohol. Bottle. Pours medium brown with a small, tan head. Sweet aroma with caramel and alcohol. Sweet caramel flavor with a funky, alcohol finish. Thinner than I expected and not very complex. Some might enjoy the sake yeast flavor but I didn’t in this case.

Bomber purchased from the brewery. A wheat wine fermented with sake yeast? Well, this should be interesting. Root beer brown pour with a very slight beige head. Very sweet caramel nose, alcohol is somewhat noticeable. Sweet caramel at first, the sake yeast lends it’s flavor toward the back end and into the finish, which is drier than anticipated. The alcohol is pretty well hidden for 11%. Body is thinner than expected, but lends to a dangerous drinkability. Wheat wines aren’t generally my thing, but I liked this one better than most. Congrats to Justin and Dan for a very successful year one!
