Channel Ocho is an extra-strong dark ale, judiciously spiced with chipotle peppers, cinnamon and cloves for a mild heat that tickles the tongue, and a warmth that lingers after sipping.

History & Style
Inspired by a recipe for Mexican hot chocolate, Channel Ocho is born of brewer Brian’s nostalgia for Mexican cooking. It is strong and dark, with Abbey Ale yeast imparting natural peppery, spicy character, intriguing earthiness, and some fruit notes. Organic whole chipotle peppers, cinnamon sticks, and whole cloves add heat and complexity to this unfiltered ale.

Tasting Notes
Aromas are earthy, with cocoa, spicy cinnamon, smoky chipotle and sweet chilies. Hints of stone fruits and banana esters in the background. Flavour is simultaneously earthy and spicy, with raisin and fig notes. Dark mahogany colour, with low to medium mouthfeel. Finish is warming courtesy of the higher ABV and spice complement.

Chicken mole, tacos al pastor, chili-spiced cheeses, fruit flan.

HogTownHarry (7447) - Toronto (Harbourfront), CANADA - JUL 23, 2017
November 6, 2014 - with blankboy, gregclow, jercraigs and mabel - 600ml bottle. Clear deep ruby with an average creamy light brown head. Nutty/roasty sweet and spicy aroma, a bit floral. Taste is like a decent brown ale with cocoa and light spice added. Average body, lively mouthfeel, finishes fairly quick but leaves a somewhat "buzzy" building earthy chili linger - pretty good, never gets too hot.

Pours a fair amount of frothy beige head and has a dark amber/brownish appearance. Somewhat weak lacing. Aromas of caramel and toffee with some spices. Flavours of malts, spices, hints of cinnamon and earthy hops as well. The finish is fairly spicy, kinda reminds me of those valentine candy hearts. Slight burning sensation on the palate. Pretty good, just think one bottle would be sufficient.

660ml bottle. Pours a hazy deep chestnut, with a moderate light tan head, which does not last all that well or leave too much lacing. The aroma has bitter chocolate, warm spice and some chilli heat. Mild citrus hops and warming chilli up front lead into bittersweet chocolate, spices and rye bread malt in the mid-palate, with lingering chilli into the aftertaste. Very tasty.

Appearance: Pours a dark brown with very little head. No lacing.

Aroma: Bit of malt and spiciness.

Flavours: Chocolate, hot peppers, dark malt, black pepper, cinnamon, nutmeg.

Mouthfeel: Average viscosity and carbonation.

Overall: An interesting spiced beer with many flavours and nuances. There is a lot going on here and that is the main attraction.

[6902-20141106] 750mL bottle. Oddly toasted spices aroma. Clear, dark brown red body with a quick foamy light tan head. Spiced pepper hot toasted grains flavour. Medium body is super hot after a few sips. Not a fan of the pepper hotness. (6/3/5/1/8) 2.3

Bouteille, merci Charles. 8.9%. Couleur brune très foncée, mousse beige. Arôme de cacao, épices, herbes, fruits. En bouche, un peu de chocolat, épices telles que cannelle et girofle, fruits noirs mûrs, notes de levures, et un peu de piment plus tard en bouche. Assez complexe, assez éparpillée, reste une offrande originale et bonne.

En fût. Verre de 12 oz dégusté directement à la brasserie. Arôme: Odeur de caramel avec une pointe de clous de Girofle. Apparence: La couleur est noire avec une moyenne densité de bulle. Présence d’un mince col beige mousseux et d’une fine dentelle sur le verre. Saveur: Goût de caramel avec une pointe de clous de Girofle et de canelle. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement minérale. Moyenne effervescence en bouche. Légère présence d’épice en arrière goût. (Rating #5664)

As the cap was coming off "hiss" and I could smell chocolate pudding right away. From a distance without sniffing I could smell chocolate & chipotle. 3 finger brown head, jet black but veary bottom has a little red/amber coper orange and is the only little spot I could see a little carbination. Smells better in bottle. Glass gives it a weird smell with a lot lighter chocolate & chipotle smell. Taste wise it reminds me of perhaps brown ale. Starts wet and some chocolate taste and some chipotle taste on some sips together and other sips together show stone fruit,banana like banana bread a little and a little chipotle. I don’t think I ever taste the cinnamon but not 100% sure. It’s a fun beer but not as great as people make it seem but it still rock’s. The spice I guess cinnamon & % start a little burn in belly that later tellaports to throat also cloves are tickleing the throat a little at times. Can’t really tell the % but I guess some of that warmth is from it. Not super warm but after taste last lng of warmth and a chipotle taste. Cheer’s. P.S. You will fill the % b4 beer done. :) This beer was free for me from Beau’s so thank you Beau’s :)

Bottle: Poured a deep brown color ale with a nice light brown foamy head with OK retention. Aroma of lightly sweet caramel malt with light cinnamon and cloves notes. Taste is also dominated by some cinnamon and cloves notes with a medium dry caramel malt backbone. Body is about average with good carbonation. Good and interesting takes on Mexican spice beer but I would have preferred for the cinnamon and chipotle notes to be more prevalent.

Draft at Barvolo. Pours black with a thin, off white head. Aroma has some slight chocolate, spice, and raisin dark fruits. Taste has some well blended chocolate and dark fruits with banana at the end and some pepper spicy on the aftertaste. Medium-full body with a medium carbonation. Overall an interesting brew. Dark fruits and chocolate with some pepper spice on the aftertaste.
