600ml bottle pours an amber brown color with a finger of off-white head that leaves some spotted lacing on the glass. Aroma is herbal with some pepper and fruity notes and hints of wood. Taste is a herbal bitterness with a fruity and malty sweetness finishing dry. Light to medium bodied with moderate carbonation. Nose: Plain , straight brown malts , off side of unknown element , woody , boggy (!) aroma 7-.
Flavor/Palate : Mid bodied , short burst of ash , milder creamy texture. Brown malts as base. Good drinkable difference.13-/20

#oncask at Cest’What What. Pours a cloudy dark ambar colour with a small foamy off white head. A bit cold, so not much aroma to start with. Flavours are muted but caraway seed / mint com through. UPDATED: APR 24, 2013 Gave my friend a blind tasting of this one, told him it was an IPA. Fantastic brew, and it’s just wonderful to see such experimentation from an Ontarian brewer. This is the type of beer our ancestors drank and it’s a real shame that it’s disappeared for so long. Thanks, guys, for bringing it back; I plan on sharing it with more friends in the future. The herbs are quite the shock at first, but after a few sips it just glides right down... lovely complex taste just mulling in your mouth. The head is just beautiful. I know it’s based on the local ales, but if I could compare this with one style it would be the strong Belgians.
