Wag the Wolf is a weissbier (wheat beer) that has been generously “late-addition” hopped with organic New Zealand varieties to provide abundant aromas of citrus and tropical fruit. Made with 65% wheat, and fermented with a traditional German weissbier yeast, expect pleasant fruit and spice flavours with a restrained bitterness on the finish.

History & Style
Our hopfenweisse, is a hop-forward and North American twist on the Bavarian weissbier. The traditionally fruity, spicy and refreshing weissbier is matched with big hop aromas of citrus and tropical fruit.

Tasting Notes
Hazy and pale gold in colour. Notes of banana, clove, papaya, mango and citurs on the nose. Lively carbonation with pleasant maltiness. Spicy and fruity, with a slightly dry finish.

Food Pairings
Sausage, Duck & Game Fowl, Goat Cheese, Summer Salads. Plays nicely with spicy food.

Pours a slightly hazy gold with a small white head. Aroma is citrus malt and grass. Taste is slightly sweet with a mildly bitter finish. There are notes of bready, toffee malt, lemon and grassy, herbal hops. Medium bodied and moderately carbonated. This is really not my idea of a hefeweizen, in fact I didn’t really notice wheat or yeast. To me it was a slightly hoppy, lemony, overly malty pilsener.

Has a nice strong hops aroma. Good foamy head in the glass, and a nice foggy orange body. Flavour is good hop notes with some fruit. Medium on the mouth. Decent enough, well made, adequately executed.

Tap at Beau’s. Cloudy gold filmy head. Tangy wheat and spice aroma. Nice clove flavor with dashes of wheat and honey. The finish gives me fresh lime and citrus hop notes as well. A well-made brew.

Bottle, brought to me by Robbie (thanks!), shared at game night. Hazy lemony yellow, lively lasting white head. Bright hoppy profile, guava and tropical fruits, some peppery notes, clean lean wheaty backbone. Very drinkable. I had this a second time in the same week, shared by Shea. Really great stuff!

Draught at the brewery. Pours a hazy medium gold, with a smallish off-white head, which lasts well and leaves good lacing. The aroma has spruce and citrus hops, with some grain and white bread. Quite strong hops up front offer pine and grapefruit, leading into quite a light body, with a bracing pine finish. A nice, quaffable wheat ale.

Appearance: hazy straw with two fingers of loose white head diminishing gradually to a thick persistent cap, moderate lacing. (4/5) Aroma: citrus, melon, tropical fruit, wheat malt, clove and floral. (8/10) Taste: moderate sweet, mild bitter, light tart. (8/10) Medium-light body, moderate carbonation, medium duration bitter and lightly spicy finish. (4/5) Aww yeah - hops you can smell from across the room upon decapping. That’s how you do a wheat beer! Lovely bright NZ hops impart fruity and almost vinous notes on a light, almost crisp wheat base. I’d love to get this fresher, actually, even though it doesn’t seem particularly faded. Another nice example of the Hopfenweisse style, right up there with Driftwood’s Entangled, and really worth trying if you find it. (16/20)

Draft - Nice citrus peel and mango. Cloudy gold with a rich white head. Bright orange peel, mango and sweet tropical notes. Very unlike the style and very good.

On tap at Moon Under Water, pours a cloudy blonde with a small white head. Aroma brings out lots of fruitiness upfront, followed by floral notes and gentle hopping. Flavour is quite robust for the style, with plenty of stone fruitiness, floral and citrus hops, and biscuity malt. For a wheat ale, this is full of flavour. Nice stuff.
