Tap at Eccentric Cafe. Mostly clear pale body with a tiny ring of bubbles for a head. The nose is sweet honey, tart apples, lightly medicinal yeast and light alcohol. The flavor is moderately sweet, pithy and just lightly tart with honey and green apples. Medium/full body is chewy with very light carbonation. Is this a cider or is this a mead? Whatever it is, my wife didn’t like it so I finished off the 3/4 pint she didn’t want. Served a clear, golden/amber under a wisp of a head. Apples overtook the aroma, both tart and sweet. Tasted very much like a cider as well, except without the acidity I’ve experienced elsewhere. I couldn’t get any honey notes off of it. Crisp, dry palate. As a cider, this was pretty darn good. As a mead, it pretty much sucks.

On tap at Bell’s Eccentric Cafe. This mead poured a clear, golden color with and orangish hue. Absolutely no head. There were huge carbonation bubbles running up the sides of the glass. The aroma was very tart and sweet with strong apple notes. Just a touch of honey. The flavor was crisp and sweet. Mostly apple. I found it to be a very refreshing drink for a hot summer day.

On tap at eccentri cafe. Pours golden-yellow color with an almost non-existant head. Aroma is tart apples and honey. Flavor is tart apples, honey, alcohol. Palate is light bodied, medium sharp carbonation, finishes tart and dry. I don’t have many meads for points of reference, but I found this to be refreshing and very crisp. I enjoyed this. tap at brewery. pours pale yellow with no head, just what you would expect from the style. nose of lemons and ripe apples. flavors are tart sweet and lots of apple-almost becomes medicnal at times. flavors exhibit a plastic note as time goes on. light body for the ABV and medium carbonation. On tap at the Eccentric Cafe on 4/28/06: Pours a slightly carbonated clear golden with thin legs. Sweet, lightly citric sour apple and clover honey aroma. To clear up some definitions here. A Cyser is a fermented beverage that features the majority of its fermentables from apples, and a minority from honey. An apple mead features a majority of fermentables from honey, and a minority from apples. That being said, The nose and appearance were spot on. Lovel clear apple body with slight bubbling. Nose was floral with fresh apple character. Flavour dissapointed, with a thin dry alcoholic beverage. The champange yeast for a poor choice, and contributes to the lack of depth in this beverage. The brewer was unable to define what type of honey was used, stating "its honey we bought in bulk from an avairy. its not clover or alfafa honey, just regular honey."
