COMMERCIAL DESCRIPTION
This imperial stout is aged with tart cherries in second use cognac barrels (after Bring Out Your Dead comes out) for 3 months. Cognac contribution is very minimal (intentionally). The resulting elixir showcases a delicious blend of roasted malts, bitter chocolate, coffee and tart cherry. Really F*&#$*!-ing good. 2015 version aged for 1 year.

Big rich nose with cherries. Thick black appearance with nice brown small bubbles head. Heavy rich flavour of cognac and fruit with malt sweetness. Finish turns chocolate and dryness slowly takes over. Exceptional rich offering.

500ml bottle. Poured at 4-5 degrees so I let it sit for an hour. This stuff is epic. Motor oil pour with a a frothy tan cap. Huge, heavy nose: liquorice and cocoa, dark cherries, vanilla, oak. This is the Ontario version of Dieu du Ciel's Peché Mortel. Delicious imperial stout. I really like that this leans more towards the liquorice than typical chocolate/coffee side of a Typical IS. This is a beautiful beer. I paid $32 for a pint bottle and I'd do it again. Top shelf IS.  ---Rated via Beer Buddy for iPhone

Keg at Ratebeer Best Beer Festival. 31/01/2016. A viscous jet black coloured pour with a dark tan head. Aroma is sweet jammy fruits, strawberry chocolate sponge, cacoa, little mineral. Flavour is composed of mineral , tangy strawberry, jammy fruits with ashy roast, dry coffee roast. Palate is sweet and rounded, drying tangy finish and highish carbonation.

Apparence : Totalement noire, lger col brun laissant un petit anneau bien que difficilement entretenu par de petites bulles plutt actives.
Nez : Riche chocolat, mlasse, fut vanill, cerises et/ou baies rappelant la framboise. Intense.
Got : Chocolat fruit, caramel, pic/bois, malt grill prsent en finale avec un aspect brl ou mme cendr. Comme le nez lannonait, cest riche et sucr.
Sensation : Ptillement plutt lev en entre (aspect qui se calme avec le temps), corps assez dense, bonne longueur chocolate et brle.
Bref : Cest riche! Le chocolat, le fut, le caramel, le sucre rsiduel; a se consomme une bire dessert. Les notes brle, boise et trs lgrement acide viennent arrondir les lampes. Si leffervescence est trop prsente lors des premires gorges, cest laccumulation du sucre qui devient excessif avec le temps. Se partagerait fort probablement bien trois.
Jai malgr tout t confondu : je craignais un fruit acide trop prsent et jai plutt t servi par une stout en fut bien ralise, multidimensionnelle dans laquelle lacidit et le fruit jouent les rles de complments. La dcision de vieillir la bire en fut de cognac neuf plutt que de seconde utilisation me semble tout fait judicieuse.

Pitch black color with dark brown head. Aroma has cognac, dried figs, some molasses, fruity berry notes in the background. Taste starts with sweet dried figs, black bitter cherries, just a hint of fruit tartness. Cognac notes throughout, finishes has caramelised fruit with some smoked/burnt notes. Full bodied, really smooth. A really complex tasting beer, smooth, easy drinking with a very well hidden ABV.

Bottle shared. Pitch black pour with an espresso head. Notes of cherries, cocoa and cognac barrel in the aroma; roasted malts, light cherries, tons of roasted coffee, raw cocoa, dried figs, roasty smokeyness. Goddamn, this is good. Smooth texture, full body, medium carbonation and a roasty, cherry-bitter finish.

Bouteille partage. Merci Lucie et David! Premire Bellwoods que jai la chance de goter. La bouteille nous sert un liquide bien noir, opaque avec peu de mousse sur le dessus. Arme de cognac, vanille, malts rtis, caf, caramel, chocolate avec une lgre acidit venant des cerises en background. Au got, cest onctueux, bien rond en bouche, le nez ne mentait pas du tout. Lacidit de la cerise est vraiment plaisante mariant merveille le cognac, la vanille et les notes chocolates. De loin, ma prfre de notre beer night.

UPDATED: MAR 14, 2017 Bottle from bottle shop. Not sure why I haven?t rated this yet, have had it many times. One of my (many) favourites from Bellwoods. Pitch black with light brown head. Big aroma of cherries, chocolate, coffee woodiness, some leather. Tastes of cherries, chocolate, coffee, with lingering dry wood and leather flavours. A phenomenal beer.

500ml bottle from the brewery (thx, Nick M.!). Vintage 2016. Pours a very dark brown with a dark brown head. Aroma is brown sugar, molasses, fruity and iron (damn) notes. Very sweet. Same taste. Oversweet stuff, kind of sugary bomb. Vintage 2015 is almost the same.

Tap at the source. Pours black, deep tan head. Aroma is aggressively robust chocolate, barrel aged character, plenty of dark cherries, whiskey, vanilla, chocolate. When I first smelled it, I got tequila (so much intensity that I gagged when I first smelled it) but that has subsided as I sniff it more and the nose becomes more agreeable. Flavor is chocolate cherry vanilla, sort of like a tartufo, booze, whiskey, sort of a bitter and cherry filled finish. Quite intense, big body, big beer. Nice though, bit too much cherry for me.
