COMMERCIAL DESCRIPTION
2013 version was aged for 3 months in first use cognac barrels and released on April 6th 2013 to celebrate the 1st anniversary of Bellwoods. 2014 version was aged for 12 months in first use cognac barrels and released in Nov 2014. This will be annual release.

Keg at Ratebeer Best Beer Festival. 31/01/2016. a viscous jet black coloured pour with a loose dark tan head. Aroma is smoked peat, meaty, salted. Flavour is composed of tangy salted roast, bitter roast earth, bitter coffee. Palate is medium full bodied, moderate carbonation and a woody finish. Lingering tangy bitter coffee.

Black pour, fast-fading minimal sized head. Cognac, dark chocolate, oaky aroma. Dark chocolate and cognac in the taste for days, oak barrel, fudge, treacle. Thicker body and mouthfeel.

Totally pitch black. No head. Smells fantastic. Cocoa and liquor. Vanilla. Yum. This is tasty. Loads of dark chocolate. cognac with vanilla. Oak. Cocoa finish like a hugely cocoa forward cookie

On tap at Ratebeer Best. Pours a very dark brown with medium tan head that lasts. The aroma is chocolate, roast, cognac, wood, vanilla. Medium body, roast, wood, vanilla, cognac, nice sweetness, very nice.

Bottled, at Ottawa gathering. Black with pale brown head. Molasses, coffee and licorice up front. Mid sweet full body and rounded mouthfeel. Licorice and maple syrup, treacle. Warming finish.

I wasnt gonna drink this tonight but once I found out Season 7 of Walking Dead had started it was just such a perfect beer to crack and pair it with: Bellwoods Bring out Your Dead 2015 Vintage Imperial Stout Aged for 12 months in Cognac Barrels. Inky black with a rusty head that verged on purple but didnt stick around. If the dead are coming you tend not to linger I guess. Awesomely intense aroma: Cacao, treacle, sweet berries & stonefruit from the cognac but the stout mellowed that out though theres still some of that 13% boozy heat apparent. Body as thick as motor oil but with a somewhat sharp carbonation. The stout gives you coffee grounds, tobacco, coarse cooking chocolate then the cognac throws in some berry syrupy sweetness, heat and charred wood character. Am I drinking a beer aged in a coffin that was doused in cognac and charred to a crisp? Could be... awesome.

2015 bottle from trade with Jeffrey. Aroma: strong licorice, candied fruits, raisins, some barrel notes of wood and alcohol. App: black with a tiny burgundy tint, small brown head, not much retention. Taste and palate: medium to full body, lots of those candied fruits are back in mouth, liquoreux, alcohol and really subtle bitter finish. Overall: as soon as I poured it in my glass I could smell strong barrel notes but those faded away really fast and the candied fruits took the 1st place in this aroma which is kind of sad since I dont appreciate that much in any kind of beer. Its good, really good but not exactly the kind of aroma and taste I would have expected from an imperial stout aged on cognac barrels for 12 months. Reminds me more of a baltic porter than an imperial stout.

Draft at RB Best Fest 16: Poured a pitch black with brown head. Aroma is cognac boozy. Taste is boozy, cognac, coffee, super roasty malt.

2016/08/26 - Pours black with a soapy tan head that quickly reduces and leaves no lacing. Aroma is amazing. Milk chocolate, roasted cereal, heavy caramel, wood, burnt brown sugar, molasses, marshmallow and cognac. Taste is more milk chocolate, wood, brown sugar, molasses and heavy cognac. Mouthfeel is full and slightly oily with smooth carbonation and a long, drying slightly warming finish. ABV is apparent, but not distracting. Un fabuleux imprial stout que je dois avec toute ma reconnaissance mon ami Nick. Cheers mate! De loin, ma bire prfre de cette brasserie et qui est, soit dit en passant, de loin suprieure nombre de grands stouts amricains vieillis. Je suis merveill. Le liquide qui coule dans mon verre est noir comme la nuit, sirupeux, pais et lourd. En tombant dans mon verre, je suis hypnotis par cette mousse brune qui se forme en surface et qui se dissipe lentement en laissant de belles dentelles sur mon verre. Des armes qui se manifestent moi avec force. Des armes de torrfaction, de caf fort mais jamais de grains brls. Une torrfaction chaleureuse et lgre mle une rglisse, des pices, une cuillre mlasse, de la vanille et un caramel roux en cuisson. D?une complexit dconcertante et aussi chaleureuse qu?elle est quilibre. Une texture des plus soyeuses en bouche alors que l?alcool rchauffe ma gorge pendant sa descente. Du caramel, une barrique rchauffe par le soleil, un alcool fortifi digne des grands chais de Cognac Franais. Je plonge dans cette douceur vanille tel les marins de l?odysse soumis au chant des sirnes...
