We refermented our barrel-aged Golden Sour on a heap of locally-grown honeybees resulting in a deep purple beer with intense notes of fruit and juicy berries. Our house culture of wild yeast and lactic acid bacteria produces additional aromas of subtle citrus and ripe stone fruits, all layered atop a pale base of barley and wheat that leads into a tart, dry finish with a hint of toasted oak.
Sampled from the tap at All Pints North 2017. Pours a clear deep purple with a purplish pink head that dissipates to the edges. Aroma has a dry honey note with tart red fruits and a bread backing. Flavor is full of very sour dark red fruits with a bit of acid and a light grain backbone.
