Biere de Garde matured in oak barrels, mixture of 11 barrels of 225 litters: 6 Pinot Noir, 2 Chardonnay and 1 Pinot Gris de Neuchatel, 2 Merlot du Tessin. L’Abbaye de Saint Bon-Chien, Strong sour ale, 11% vol. is a real UFO, is a beer brewed in honor of the former brewery cat, sanctified in her disappearance. This vintage shimmering red-amber is matured for months in oak barrels that previously contained wine or eau-de-vie. The drums give a very complex flavors this beer. In the mouth, she recalls the plot of a fruity red wine with a very sharp acidity.

Rating from 2010. Rotwein-holziger Geruch, orange bräunliche Farbe. Schöne Holzaromen. Der Antrunk ist süßlich-holzig, aromatisch-frisch. Angenehm säuerlich. ImNachgeschmack ist das Bier wein-typisch säuerlich, sehr lang anhaltend mit feiner Holznote. Sehr ausgewogen holzig-säuerlich mit feiner Hefemilde. Die 11% sind nicht zu schmecken!

The nose translates to the flavor with a very robust profile. Lasting tart, funky notes. Plenty of oak, fruit, vinegar, and booze. Lasting finish. Powerful stuff.

Bottle. Pours clear dark chestnut with no real head. The has cherries, plums, oak, grapes, red wine. Low carbonation, fine dry and quite light and fairly creamy mouthfeel. Flavour is elegant, oaky dry, grapes, caramel, sugary, vinious, lots of pinot noir. Quite tart and dry overall. Wonderfully complex and elegant, with only a slight paraffin note to detract.
