This is a beautiful beer. From bottle No. 00276. Pours a deep amber red color with a really nice looking beige head, that stay nicely. Aromas for dry red fuits, berries, malts and notes of oaks. Complex flavors of dry red fruits, apples, light woody notes. Nice dry sourness, reminds me of some great lambics. Nice complex evolving and long lasting taste. Very enjoyable.
Had the 2009, and this 2011 is just as nice, very top consistant Swiss Ale. Can’t wait to try other BFM.

Bottle, courtesy of DerA. Pours almost flat cloudy rusty amber. Aroma is light vinegar, light acetone, wine, barrel. Body is heavy, sour and acidic, vinegar, rusty, vineous, grapes, boozy, intense. Maltier than younger ones, and not as sour. Palate is long, strongly vineous, light booze, dried fruit. Great balance. Outstanding! Tap at La Fine Mousse, Paris, 26th April 17. Pours deep red, brown, hazy. Aroma is barrel, vineous notes, wood, you can tell the age in this beast. Taste is massive, tart, but balanced sour and some sweet notes, sherry, vin fruit, wine vinegar, barrel and wet wood, it tastes aged and is a fabulous beer. Bottle sample tasted at BBF Lab Madrid 2016 on the 02/07/2016. Hazy dark amber colour with a thin beige head that dissipates quickly. Aroma is berries, slight alcohol, caramel and sugar. Taste is tart, sour and fruity. Cherry and alcohol aftertaste. Next one please!

Keg, 1/3 pint. Pours medium dark Merlot with medium haze. Medium opaque. Thin tan head subsiding quickly. Scent is super dense quadrupal Saison with (I suppose) red grape/Lambic properties. Taste is dense red grapes and sour yeast with a bit of vinegar. It has some sugary sourness like candy and no negative/acidic properties of note. 375, capped. Pours a cloudy dark burgundy with very little head; dark golden murky edges. Bright vinous oaky nose, showing ferment character (balsamic) and a berry fruitiness. Creamy medium body, nearly still. Oak, blackberries, balsamic, and a bit of strawberry/snack cherry on the mid palate. Pleasant sweet tangy finish. Red amber body with golden reflections; cloudy to opaque; big bubbles and and not lasting foam. Aroma of candied cherry, strawberry, raspberry; vinous perfume, alcohol like brandy; very very apetizing. Full sourness mixed with roundness; oily; not very much lasting but much body; intense taste of fruit : strawberry, prune; woody and lightly astringent; woody bitterness that progressively develops. Une robe qui n’est pas très belle mais qui est loin d’être affreuse. Un nez très intéressant de fruits rouges, de vinaigre balsamique, de bois et de caramel. Le goût est fidèle aux parfums. L’aigreur n’est pas agressante. Les sucres offrent un équilibre. Les fruits de la vigne et le caractère boisé sont appréciables comme tout. En bouche, le corps est de bonne densité avec un jeu faible des bulles et une texture vineuse. La finale de vinaigre balsamique est de qualité. Tout compte fait, une bouteille bue un weekend en très bonne compagnie que tous et toutes ont trouvée très chouette.
