Small fizzy shortlasting head, slightly hazy. Aroma is slightly sour-ish dry, vinegar, oak, grass, berry skin, alcohol, sour red berries, sorrel, caramel. Taste is sour-ish, vinegar, oak, sorrel, berry skin, minerals, sour red berries, caramel, alcohol, bark. Medium bitterness, nice acidic mouthfeel. Nice.
courtesy of Jérôme Rebetez - hazy amber beer with a reddish hue, no foam left; solid yet well-integrated woody notes; sour cherries, molasses and apples; full-bodied, moderate carbonation and with a solid sourness, some sweetness hidden below lasting a bit in the finish; very long sour and woody finish of cherries, rum and apples - great ! Dark amber color with hardly head. Very much spiciness, sweet, vanilla, maple. Complex. More dark fruits and more sugar and vanilla than the usual SBC.
Prunes, sweet fruitiness, very rich. The sourness is very balanced. Smooth mouthfeel. Amazingly strong barrel. The regular Saint Bon Chien is a bit better in terms of overall balance I think.
