After the Equilibrista, our beer inspired by the Champagne world, here it is a new experiment on the “wine meets beer” theme. This time, though, we tipped the scales in favour of beer, adding to the Duchessa wort only a 25% of wine must: in this case we used Malvasia (coming from our friends of Tenuta di Bibbiano, as usual), a white, aromatic grape variety which gives the beer a gentle and nice sharpness and an inusual, fruity nose. The beer is bottle-fermentd using Champagne-yeasts, and it has a quite intense “perlage” (bubbles) that makes it perfect as an aperitif or even for the whole meal. The “chaotic” label was designed by Valentina De Luca, an Art student at the Istituto d’Istruzione Superiore Antonio Cederna of Velletri (Rome), who won our contest “Etichette Bizzarre”.

75cl Bottle @ Be Hoppy, Madrid, Spain. Amber colour with a thin white head. Aroma is white grapes, fruits, tart. Taste is white grapes, apple, sweet, tart, slightly spicy. Medium body, average carbonation.

Bottle. Light haze, rich gold color, white foam. Aroma: white wine, white raisins, flowers, a little spicy, light notes of cinnamon and nutmeg, a little cider. Taste: white wine, good apple cider, champagne, raisins, a little spicy notes.

Pours amber with a very quickly fading head. Nose shows champagne, apple cider, pear and delicate cherry. Flavours include more apple cider, raspberry and cherry, soft booze and white wine notes. Quite dry, finishes with a soft acidity.

Tap at Maxs. Filtered tan orange body. Not much of a head. Has those thick white wine grape tones. Definitely more grape than Saison. Downright juicy. Some funk creeps through. Worth the price of admission, very enjoyable. Tastes like it was aged in a soured white wine barrel. The sour barrel tones and Saison yeast give it an out there pineapple awesome falvor. Reminds me of Sweet Mullets sour stuff. Right on.

On tap at the Knick. Mild tart white wine aroma and not much else, pleasant but weak. Dull medium amber clear with thin head. Medium body with medium-light carbonation. Lightly carbed white grape juice in taste, chardonnay notes. Mild light oaky finish with white wine after.

Bottle at Vinocom. Golden body, no head. Dry, slightly stale aroma of raisins and honey. Dusty taste, raisins, dry and sweetish. Equilibrista was very good, a well executed blend of beer and grapes/wine. Caos is less so in my opinion. I just don’t seem to dig the taste combo here.

[email protected] 2016, Bodegraven - pours golden amber with white head. Light to medium sour fruity aroma and taste, acidic, grapes, some grassy and herbal hoppy notes, light spice in the finish.

Draught at Borefts Beer Festival 2016. Clear amber coloured with a small white head. Fruity aroma of hops and pine needles. Fruity flavour of caramel, hops and pine needles. Sweet and hoppy finish.

At BBF,clear palish yellow, fruity grapey aroma, mellow fruity sourness, spice and vinous notes coming through and be coming dominant, empathic sourness with a complementing sweetness. Nice and interesting.
