Oyster Stout
Si chiama Perle ai Porci ed una Stout realizzata con limpiego di ostriche. Avete capito bene, proprio ostriche, utilizzate in grande quantit per regalare alla birra aromi e profumi davvero unici. Per quanto possa sembrare stravagante, luso di ostriche nellarte brassicola una soluzione ben conosciuta, che in passato ha dato vita a un sottostile preciso: quello delle Oyster Stout. La nostra Perle ai Porci si ispira proprio alla ricetta classica: abbiamo aggiunto la bellezza di 15 kg di ostriche su un totale di 500 litri di mosto. Ostriche buonissime, tra laltro: Fin de Claire N2, arrivate a Borgorose direttamente dalle coste della Bretagna.

Black color; creamy head. Mild aroma of roasted malt, with a metallic feeling (maybe the iodine). Good body and smooth mouthfeel; roasted malt, but without ashy character and excess; the mouthfeel becomes drier in the end, with stronger chocolatey and roasted notes; a bit salty.

Keg at CBC Holborn, 03/06/15. Light black with a decent tan covering. Nose is sweet malt, nutty, toffee, chocolate. Taste comprises chocolate, toffee, dark malt, light charr, toasted marshmallow. Medium bodied, fine carbonation, semi drying close with a good balance of sweetness and bitter roast. Decent enough stout.
