A brand-new beer from a brand-new, very promising head-brewer. India Pale Ale following the American Pale Ale style with a fruity aroma (grapefruit), with peppery notes (East Kent Goldings), a rich taste of malts (Maris Otter and Crystal), with a very long bitter and citrus finish typical of Cascade hops.

330 ml bottle bought at Craftissmo in Tsim Sha Tsui East.

Preparation: fridged bottle; Rested in room temperature for 5 minutes. Popped at 14C (within recommended temperature range) onto the Chimay chalice.

Looks: Cloudy hazy dark amber with no yeast sediments; One quarter finger head and white foam which fades in 30 seconds. Very good sticky lacing with slight carbonation.

Aroma: Very fragrant sweet ale malt, with fresh grapefruit, floral, molasses, light pine, light pepper, lemon and thin grass.

Taste: Medium sweet and refreshing ale malt, with grapefruit flesh and zest, apricot, yellow fruits, light honey, strong molasses, light pepper, strong pine, yeast, strong lime and strong bitter grassy hops.

Body: Medium, thick, oily and slightly oozy palate.

Mouth Feel: good strong Ale maltyness in a rich thick body. Grapefruit is rather moderate but pleasant. The best part is the sweetness - nice and tasty molasses and light honey, moderate but impressive to the taste buds - really give this brew a good lift. Also some good pine, light pepper and yeast. Lively and nice!

Hoppiness: Quite fresh grapefruits, floral, light pine and peppery nose and taste. Bitterness is notable, a bit low for the style but just right for me. All ends with a lasting, bitter sweet finish.

After Taste: Slightly dry. Rich and savory to mouth.

Comments: This is a well-made Pale Ale - refreshing with impressive, just-right sweetness, piney and well-intended light citrus. With things being done with a delicate touch, it feels like an IPA more than an APA. Still, very good for chilling out!

Bottle 750 ml at home, poured into a big tulip glass. ABV 6.4% dark orange colour on the body, almost amber. quite transparent but with lots of yeast bits floating around in the body. Two fingers of off-white head, medium thick, with good retention and medium lacing left on the glass. Aroma of grapefruit, caramel malts, lots of mandarines. Taste has yeast, grapefruit, more caramel malts, a bit of orange peel, mandarines, with a good bitterness on the aftertaste, lingering for quite a long time. Medium body, low carbonated but quite enough, nice dryness on the palate. Overall: Great beer, I bet fresh would be even more better.

Un classico di birra del Borgo. Reinterpretazione personale di una IPA. Bel colore ambrato, bella schiuma pannosa e persistente. Profumi erbacei e caramellati. Buon corpo, bassa carbonatazione, ottimo equilibrio malti/luppoli. Buon amaro finale. Buona.

UPDATED: MAR 9, 2014 From a 750ml bottle on 3/3/2014. Pours a very dark golden/light amber with a medium head. Has a light spicy, fruity, yeasty aroma. In the mouth, its much more intense - you lots of caramel and bready malt, sweet citrus and stone fruit (orange, apricot), and a lovely tangy, spicy, hoppy bitterness. Has a thick, almost creamy palate with medium to lively carbonation. It is a bit hard to pigeon hole style wise, but a hoppy APA wouldnt be far off the mark. Another damn fine beer from this brewer.
