COMMERCIAL DESCRIPTION
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Draft at Bitter Creek Alehouse. Medium golden, haxy, small soft white head. Floral yeasty aroma, subdued candy sweetness. Taste is also sweet. Not fruity, mildly tart and dry. Original wild ale.

[Bottle (750ml) at Volo -- shared w/ and c/o j&m] Pours a hazy, bubbly orange with no head. Light Lambic aroma -- fruity, lightly vinegary and woody. A touch watery flavour of grapes, other fruit, funky yeast and wood. Average to medium bodied. Lovely stuff.

Bottle. Pours dark orange, quite clear, almost no head. Aroma of barnyard, orange zest and wood. In taste tart with lemony notes, also nice funky and sour notes. Medium body, high carbonation, dry and tart finish. Really nice sour beer.

2016-07-27. Hazy golden orange body, near headless. Aroma of lambicy barnyard funk, straw. 7+ Flavour is interesting, light barnyard funk, pleasant fruit notes, lemon, good amount of acidity throughout. Whispers of the saison make appearances but the overall impression alternates between a very nice blend of the two and a slightly watery lambic. 7++ Average bodied palate, low carbonation. Pretty nice despite some quirks. 7-8/3/7-8/3/16 Bottle at Volo, Toronto.

Tap at Ale Arsenal. I kicked the keg....so this may be the best beer I have ever had free via that route. Pours a slightly hazy dark yellow, with a MASSIVE head [I mentioned that I blew the keg....so what else would you expect]. Overt tartness layers well with the earthy-dominated aroma. Solid and enjoyable.

Incredibly murky bronze colour with an extremely tiny head. Aroma is nutty, lemony, with some sweat and barnyard funk. Smooth sour taste that doesnt pucker your face dry. Velvety finish for a sour.

On tap at The Sovereign. Lovely and smooth. Less carbonation than I expected. Delightfully tart with good lactose sour flavor.
