A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Bottle. Virtually no head. Body is cloudy dark yellow to light amber. Aroma is lightly malty (toasted grain, caramel), lightly yeasty (cobwebs), with notes of apple butter, pear syrup, mild vinegar, sour apple, oak, decaying apricots. Flavor is lightly to moderately sweet, moderately to heavily acidic, lightly bitter. Finish is lightly sweet, moderately to heavily acidic, lightly to moderately bitter, slightly unclean. Medium body, watery texture, soft carbonation, lightly alcoholic. Somewhat unpleasant, surprisingly (for this brewer). Vinegary/acetic with not a whole lot of enticement otherwise. Bracing acidity as expected, but its not clean and lip-smacking like most of Ducatos sours. A dumper for me, sadly.

75 cl, bottled. Pours cloudy orange with a small white head. Aroma: Sour zesty aroma, citric fruits. fermented smell. Taste: Mildly sweet, tart taste. Leather, dried citric fruits. Pleasant grains. Palate: Medium body, dry finish. Average carbonation. Good and balanced.

Bouteille 750ml, gracieuset de msjpearson, Thanks Mike! Couleur jaune-orange ple trouble, aucune mousse lexception de quelques grosses bulles fugaces. Arme de levures sauvages, lgrement acide, malt, miel, cuir. Got de levures sauvages, funk, malt, acidit moyenne, lgre amertume, soupon dalcool, citron. Carbonatation presque absente voire nulle, corps moyen.

[Bottle (750ml) at Volo -- shared w/ and c/o j&m] Pours a hazy, bubbly orange with no head. Light Lambic aroma -- fruity, lightly vinegary and woody. A touch watery flavour of grapes, other fruit, funky yeast and wood. Average to medium bodied. Lovely stuff.

750ml bottle. Murky orange with a thin foamy white head. Flavors are cereals, orange peel, lemon, stone fruits, lambic funk and herbs with spicy and floral notes. Good lactic acidity. Light to medium body, soft to moderate carbonation, slick texture.

2016-07-27. Hazy golden orange body, near headless. Aroma of lambicy barnyard funk, straw. 7+ Flavour is interesting, light barnyard funk, pleasant fruit notes, lemon, good amount of acidity throughout. Whispers of the saison make appearances but the overall impression alternates between a very nice blend of the two and a slightly watery lambic. 7++ Average bodied palate, low carbonation. Pretty nice despite some quirks. 7-8/3/7-8/3/16 Bottle at Volo, Toronto.
