A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Bottle 750ml.

Clear medium orange yellow colour with a average, frothy to creamy, good lacing, mostly lasting, off-white head. Aroma is moderate barnyard, wood, honey, fruity, lambic alike. Aroma feel IMO a bit young. Flavour is moderate to heavy sweet and light to moderate acidic with a long duration, citrus, fruity, peppery. Flavor is IMO a bit like a saison. Body is medium, texture is oily and sticky, carbonation is soft to flat. [20110613]

75 cl bottle. Pours hazy yellow with a small white head. Aroma is citric, barnyard and fruity. Fruity, mild spiced and slight herbal. Crisp bretty and citric. Dry and lingering fruity into a smooth finish.

Bottled. A hazy amber beer with a thin beige head. The aroma has notes of hops, brettanomyces, and malt. The flavor is sweet with notes of malt, caramel, lemons, and a bit of brettanomyces, leading to a dry finish. Thanks yespr for sharing.

Bottle at yespr. Hazy amber coloured with a huge off-white head. Fruity and light acidic aroma of barnyard and berries with notes of candies. Fruity and light acidic flavour of barnyard, hops and berries. Tart finish of berries.

Borefts VI. Day 2. Bottle pour from brewery. Hazy gold beer, no head. Palate is light and semi dry. Fine carbonation. A light and pleasant sourness. touches of lemon and dried fruits. Mild floralness. Nice enough.

Bottled at Bishops Arms Folkungagatan, Stockholm. Cloudy golden, small head. Tart nose with lemon, thai basil and hay. Dryish with medium body and well rounded mouthfeel. Citric with milk and thai basil Slender and elegant. Mid bitter finish. Unique and tasty.

Bottle 75 cl. Courtesy of yespr. Pours a cloudy opaque golden with a white head. Farty, Bretty barnyard aroma. Medium body, lively carbonation, Bretty with a tropical twist to it, even coconut accents! Ends dry with quite some barnyard. Very subtle on the tartness and actually quite sophisticated. 200812
