A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

A soft, steady pour produces a -finger thick, pale tan colored head. The beer is a pale amber / gold color that shows a brilliantly clear, full gold color when held up to the light. The aroma smells of light, not quite faint, lactic acid, funky phenolics & musk, perhaps a hint of citrus, lots of dried-grass / hay like graininess, a touch of medicinal notes.

Nicely tart tasting, it manages to have a bite without being overly sour. There is a spicy, bitter, sort of herbal bite to the finish that melds with a rounded, pale malt and grassy grain character. There is a certain lemon like character to the acidity towards the finish, this seems like a departure from a typical Lambic contribution. Light bodied and quaffable, but it has a soft creamy texture to it, despite having some prickly effervescence; light but with some palate presence. Earthy spice notes mix with hay / straw like grain notes to produce something that I imagine to be a dried field of weeds / wildflowers. Hints of medicinal notes (both herbal and Lambic in character), some lightly musky notes, and a definite mustiness come out more as the beer warms up.

A really nice blend of Saison and Lambic; this plays out as such as well, with noticeable components of each; I like the soft herbal affects, and the Lambic notes certainly bring a lot to the profile of this beer.

Draft Third of a Pint at GBBF 2016 (Day 4), Olympia, London Aug 2016 - Hazy Gold in colour. Small white creamy head. Fruity; mildly sour fruit, lemony. Yeasty; funky, bretty, leather notes. Spicy; peppery. Hoppy; floral hops. Malty; caramel, honey notes. Mildly tart fruity yeasty spicy throughout. Dry mildly sour finish. Very drinkable. Lovely beer! (2016-08-12)

App.: Cloudy to murky deep golden with a frail white head. Aroma: Sour, citrus, light funk/barnyard, light bitter green herbs, leather. Palate: Medium body with almost no carbonation. Flav.: Tart citrus, lemons, lighter funk/barnyard/leather, some bitter green herbs; lightly to moderately tart with moderate bitterness and a lemony/funky finish.

Not quite my cup of tea.

Bottle shared with friends at Le Saint-Bock, Montreal, Quebec, Canada. Hazy amber body with a small white head. Smells super good, lemon sourness, funk, barnyard are in there for sure. Herbal, lemon tart with a great yeasty final. Well done!

750ml design bottle from Vinmonopolet Langnes. Filmy layer, hazy golden body, dotted spots on the glass. Grass, yeast, and herbal hops on the nose. Mid-tart lemony flavours added by grass and leaves. Yeasty fruitiness to the finish. Refreshing and rounded on the swallow. (Shared with Stefan, Elisabeth and Finn, session in Troms 05.11.2016).

On tap at York River Landing, as "Beersal Mattina." This is an intriguing, complex, delicious blend of beer. It starts out slightly sweet, with a bit of lemon and citrus from the saison, but the second half is completely dominated by 3 Fonteinen funk -- it smells and tastes like wet, funky barnyard, and it works really well. Top quality beer.
