COMMERCIAL DESCRIPTION
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

A soft, steady pour produces a -finger thick, pale tan colored head. The beer is a pale amber / gold color that shows a brilliantly clear, full gold color when held up to the light. The aroma smells of light, not quite faint, lactic acid, funky phenolics & musk, perhaps a hint of citrus, lots of dried-grass / hay like graininess, a touch of medicinal notes.

Nicely tart tasting, it manages to have a bite without being overly sour. There is a spicy, bitter, sort of herbal bite to the finish that melds with a rounded, pale malt and grassy grain character. There is a certain lemon like character to the acidity towards the finish, this seems like a departure from a typical Lambic contribution. Light bodied and quaffable, but it has a soft creamy texture to it, despite having some prickly effervescence; light but with some palate presence. Earthy spice notes mix with hay / straw like grain notes to produce something that I imagine to be a dried field of weeds / wildflowers. Hints of medicinal notes (both herbal and Lambic in character), some lightly musky notes, and a definite mustiness come out more as the beer warms up.

A really nice blend of Saison and Lambic; this plays out as such as well, with noticeable components of each; I like the soft herbal affects, and the Lambic notes certainly bring a lot to the profile of this beer.

It has a good earthly sour aroma to it. The flavors are highlighted by earthly elements with plenty of tartness. There is also a strong vinous element as well.

Pretty sure I bought this back in 2012 and its sat in the same spot since. Im not gonna put the aroma as upper level stuff but the taste is pretty damn fine. Citrus, dust, honey, yeast, barnyard on the end of the nose. Super tasty stuff - sourness is very manageable, honey, leather, super sharp citrus, leather, barn, nothing overpowering. Amazingly refreshing. It would appear that an even lengthier sit would not have hurt this in the slightest. Excellent.

Sweet and sour aroma with white grape, a little burnt match, and lots of sour cherries. Clean. Hazy yellow under a lasting white cover and lace. Quite sour flavour, clean, and with cherries and white grape. Not overly complex.

(Draught at Beer Temple, Amsterdam, 22 Feb 2017) Hazy golden colour with lasting, white head. Fruity, sourish nose with notes of citrus, brett, grass, bread and grapefruit. Fruity, tart taste with grapefruit, bread, lemon, brett, a touch of cinnamon and a balanced sourness in the finish. Medium body, quite dry. Low bitterness. Tasty and very well balanced with a fresh acidity. Very nice.

Bottle at Open Baladin Torino. Pours clear gold with a medium, frothy white head, medium retention with light lacing. Aroma is farmhouse Brettanomyces, earthy hops, wheat malt and moderate vinous character with soft lactic notes. Flavor is tart and lactic white grapes, dry farmhouse Brettanomyces with earthy wheat malt, earthy hops and light bitterness with a dry finish. Medium body and carbonation.
