COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friars robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.
To all those who still hold dreams and will never cease to search for the happiness they deserve.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Todays Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.
It is like following an illusion we fell in love with a long time ago leaving us with the realization that when we pursue our dreams the immortality of spirit is found.

Amber pour from bottle shared by bu11zeye. Aroma is fruity, featuring sour apples. Taste is slightly sour fruit, pumpkin pie spices and carbonated fizz. Light, hoppy finish. Not bad at all for an Italian beer.

Beautiful 330mL bottle in a mini-Duvel tulip glass. Pours a thick dark amber, cloudy and even cloudier when the bottom is poured. Nothing too special about this beer, a nice mix of Belgian yeast esthers, very very fruity due to that (maybe too high of a temp). Fruity esthers pretty much take over and there is not too much else to it. Medium body with an empty ending, medium-strong carbonation. I could drink it again but nothing grabs me.

7/17/10 notes: bottle. Appearance is murky dark brown with ruby. Aroma is a blast of aged fruit, nuts, toast and chocolate. Flavor shows more dried red fruit and dark candy sugar, with a finish that incorporates mild tartness well. A great drinker from start to finish, interesting at every step.

Thanks to bu11zeye for sharing this bottle. The beer pours a brownish-amber color with a white head. The aroma is toffee and caramel malts. The flavor is similar with a little bit of citrus to go with the toffee. There is also some brown sugar in the flavor. Medium mouthfeel and medium carbonation.

Bottle at Bistro lautre oeil. Red brown with a medium beige head with good retention. Aroma is fruity with malt, balsamic, sugar and caramel. Flavor is fruity with red fruits, caramel, malt, minimal herbal notes, sugar and yeast. Medium body.

Pours a murky amber color with a medium beige head. Aroma of caramel and toasted malt. Flavor of caramel and toasted malt. The body is medium and the carbonation is soft. Its definitely not a bad beer, but this one just didnt do it for me.

Bevuta in bottiglia sotto il marchio "birrificio artigianale italiano - strong ale" con un bassotto disegnato, sono pressoch certo che sia questa. Colore ramato, parecchia schiuma persistente, un gusto che mi ricorda tantissimo la brooklyn lager, ma pi corposa e leggermente pi alcoolica; un forte amaro sul finale (dry hopping?). Mi piaciuta moltissimo
