COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.
“To all those who still hold dreams and will never cease to search for the happiness they deserve”.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Dec 23 CBAC. Big lasting brown head on dark brown head. Malty nose with fruit notes and a faint sour hint. Rich wine like malty flavour. Spice, hint of molasses. Nice winter beer.

[ASPETTO] marrone scuro con riflessi porpora controluce, velata [SCHIUMA] beige, fine e abbondante, buona persistenza [OLFATTO] profumi di miele, caramello, lieviti, frutta rossa sottospirito, sentori alcolici e spezie [GUSTO] mantiene sapori dolci , melassa e miele, a cui aggiungono note di frutta matura, prugna e fichi, potenziati da una alcolicità evidente ed una speziatura sostanziale nel finale. [TEXTURE] corpo medio, carbonazione contenuta [COMMENTO FINALE] una ale scura, di influenza belga che quasi si avvicina al concetto di dubbel, con classici profumi e saporri di frutti rossi, un alcohol evidente ed uno speziato quasi natalizio. Alcohol forse unpo’ troppo contundente anche sei gradi non sono esagerati. per il resto direi buona, anche se non stravolgente.

Ok. I swear I was just saying how I hate del ducato beers. .... Ha. K. This smells like unknown vapors. Brownish with a silty head. The smell is not appealing what so ever. Let this sit for almost an hour and it did improve. Plums, cheap white wine, raspberries, figs - maybe it was the figs. Not gonna finish this, mainly cuz I’m tired. The taste is kinda sour with a quick fade bitterness early, fig, caramel sort of burnt, fruits, wine, heavily carbonated. This ain’t my this at all.

Bought at a tiny wine shop on Kauai. Poured a deep, hazy amber into ridiculous little hotel glasses. Caramel and fruit aroma. Taste an interesting mix of sweet and tart with noticeable yeast.

Bottle split with maniac. Beautiful deep ruby plum color, bright cream colored head, solid lacing. Aroma of plums and cherry skins. Taste is slightly sour cherry jam, dusty edges, bitter and peppery finish. Nice.

330ml bottle. Slightly cloudy reddish dark amber colour with average to huge, firm, endlessly lasting, moderately lacing, foamy, off-white head. Toasty, caramel malty aroma with fruity notes of berries, yeasty overtones. Taste is yeasty, fruity, toasty caramel malty, has also a tart note; some warming alcohol in the finish.

Si presenta torbida, con poca schiuma.Al naso si presenta con note di mosto e frutta matura. Al palato si rinnovano le suddette impressioni. Non è troppo carbonata. Un pò slegata forse. Non mi ha fatto proprio impazzire; forse bottiglia sfortunata. Comunque sempre grandissima fiducia a questo gran birrificio.

Bottiglia 33 cl. Colore ambrato carico, velato, con schiuma beige abbastanza persistente. Naso intenso, abbastanza persistente e complesso (fruttato, tostato, miele). in bocca entra dolce, morbida, abbastanza calda e con un bel corpo.......piaciuta!!

Interesting beer. Poured perhaps a touch cold, with a small to medium sized, cream-colored head that soon settles to some swirls and a ring with a tiny bit of lace. Color is a cloudy brown amber opaque in the wider parts of the glass. Aroma is a muted combo of malt, fruit, apricots, plums, yeast, wine. Flavor is a blend of those qualities with interesting interplay between sweet and carbonic tang being slightly more dominant than bitter. Very rich. Body is big, but the sweet, tang and bitter create high points that along with its richness make it a little overpowering. Carbonation is good taken alone. Finish is medium in length. No alcohol warmth. One and done.
