This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Unclear medium orange color with a large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, moderate yeasty, leather, brett. Flavor is moderate to heavy sweet and moderate bitter with a average to long duration, dry dry finish, leather notes. Body is medium, texture is oily, carbonation is soft to lively, loads of carbonation. [20091123]

75 cL bottle. Pours hazy dark orange with a huge off-white head. Aroma is milky and roasted caramelish malt. Fruity and slight hops spiced. Spiced and dry flavoured, light fruity note. Ends dry and bitter into the finish. Lovely.

Bottled. A murky orange-brown beer with a huge light tan head. The aroma has sharp notes of acid combined with notes of wood, lacto, and caramel. The flavor is sweet with notes of caramel, lacto, brettanomyces, wood, and fruits, leading to a tart finish. Thanks yespr for sharing.

Bottle at Papsø. Muddy orange red coloured with a medium sized off white head. Light acidic aroma of berries, brett and red wine. Light acidic flavour of berries, brett, red wine, liquorice and oak. Tart and oaky finish.

Bottle. Pours a clear orange color with a small white head.Has a fruity malty aroma with some hoppy citrus hints. Fruity malty caramel flavor with some hoppy hints. Has a fruity malty caramel finish.

Bottled@SBWF2008. Amber colour, mediumsized beige fluffy head. Aroma is fruits, caramel, yeast and some mild toffeeishness. Flavour is hops, fruits, caramel and some mild notes of grass. Wellbalanced, but a bit boring.

Bottle split with maniac. Beautiful deep ruby plum color, bright cream colored head, solid lacing. Aroma of plums and cherry skins. Taste is slightly sour cherry jam, dusty edges, bitter and peppery finish. Nice.

ACBF. Hazy red amber beer. Small tan head. Light palate. Sweetish light malt. A liitle dried fruit and some bubblegum underneath. Overall a dissapointingly average beer.

UPDATED: JUN 12, 2008 Bottled at Monk’s Café, Stockholm. Pale amber, small head. Caramelly and grassy. Dry and surprisngly light and crisp. Toffee undeneath a thin blanket of grapefruit. Moderate resiny bitterness. Well balanced.
