COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.
“To all those who still hold dreams and will never cease to search for the happiness they deserve”.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Beerlando (3343) - Orlando, Florida, USA - FEB 9, 2010
Draft at Redlight Redlight. Pours a clear reddish-amber color with a small, foamy, tan head that settles to a thin, patchy film. Micro-spot lacing dots the glass. Aromas are boozy for a relatively small beer, showing grainy alcohol notes of a base of pale cereal malts, toast, oregano, and an odd, briny sort of funk. Hints of pickles come to mind. Flavors again are grainy, in a alcoholic sort of way, with a strange, mildly tart funk, dusty yeast, and notes of sage and oregano. The palate is thin, bordering on watery, sporting moderate carbonation and a drying, boozy finish. Eh, I’m not impressed in the least bit with this one.

Bottled. Pours foggy brown with modest off-white head. Aroma: strong malts of caramel, toffee, sourish yeastiness, dried fruit, candied sugar. Medium body. Soft carbonation. The taste is initially richly malty and lightly sweet. Fruity & spicy middle. The ending is pretty tart with malt toastiness and light hoppiness. Interesting.

Bottle @ Mondial 2009. Aroma is sweet candied malt, some wheat notes, deep copper, small toffee head. Taste is a big roasted malt, caramel and nutty. Medium bodied, lucious mouthfeel. Terrific!

Rating #2767 - 2016.08.28 - Bottle from CBI. Aroma of demerara sugar, candied raisins, cocoa powder. Pours a murky brown with an off-white head. Flavours of brown sugar, raisin, allspice come through - smooth finish. Lovely beer.

Bottle @ ACBF 2011. A clear red/brown colored beer, with a beige head. The aroma of malts, fruits and vanilla. The taste of sparkling fruit, citus, winery. The aftertaste sweet fruity with some bitter.

Bottled sample via boutip. Ruby brown in colour with medium carbonation. Aromas are of red wine, caramel, red apple, and spicy Belgian yeast. Acidic red fruit flavors dominate the palate, and are backed by minerals, toasted malt, pale malt, and magic marker. Medium bodied, but the tartness and slightly fizzy carbonation make it feel a bit lighter on the palate. A hard beer to pin down, yet it’s quite drinkable.

Deep amber reddish beer with a nice creamy-lacing tan head. Caramel, fruits like fig, some overriped cheese in the aroma. Medium body, fruity character, taste of fig, raisins, light sourish-vinous taste, light roasted-toasted flavor.

Ok. I swear I was just saying how I hate del ducato beers. .... Ha. K. This smells like unknown vapors. Brownish with a silty head. The smell is not appealing what so ever. Let this sit for almost an hour and it did improve. Plums, cheap white wine, raspberries, figs - maybe it was the figs. Not gonna finish this, mainly cuz I’m tired. The taste is kinda sour with a quick fade bitterness early, fig, caramel sort of burnt, fruits, wine, heavily carbonated. This ain’t my this at all.
