COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Bottle - Raisin, dark sugars and some cocoa. Dirty brown with a rich beige head. Cocoa, dark malts, light oxidization and light raisin. Flavours are a little less pronounced than the nose would suggest.

Bottle, 6.5%. Fruity and yeasty aroma. Hazy dark brown colour. Very big stable rocky light brown head. The flavour is nicely malty, has some roasted notes. Mild sweetness. A little alcohol in the finish. Actually well-balanced. High carbonation.

11.2 bottle from Oak Tree. Pours hazy ruddy with a 3 finger off-white/beige head. Aromas of dark fruit resembling date/raisin and some warm caramel. Near medium body with rather spritely/fizzy carbonation. It’s a little herby, a little oaky, and lightly bitter. It actually suddenly gets pretty bitter. A different beer - as so many of these Italian crafts are. Takes getting aclimated to. Definitely worth the experience. Wonder if there are chestnuts? Suddenly it comes to me that it’s a little sour. Even better.

Kick 061115. Dark amber colour with a beige head. Flavour is sweet, malt, hop, caramel, sugar, berries, spices, yeast, dried fruits. Nice /OK beer.

Bottle at Papsø’s - Thanks. Cloudy red/amber - offwhite head. Bretty, wine notes, sparkling, wheaty, berries, soapy, wild, light roasted, red berries, nice brett & lacto - but a bit messy.

Bottle. Poured hazy dark brown with an average frothy white head that was mostly lasting with good lacing. Moderate complex dark fruit aroma. Medium to full body with a smooth texture and flat carbonation. Medium to heavy dark fruit tart flavor with a medium tart finish of moderate duration. This is a smooth complex beer

Bottle. Frothy off-white good mostly lasting head. Amber cloudy colour. Moderate malty and light hoppy aroma. Slightly sour. Intended? Moderate bitter sour flavor. Average moderate bitter slightly soapy finish. Oily palate. Not my favorite.

UPDATED: JUN 12, 2015 A reddish amber ale with a thick creamy moka head. In aroma, sweet malt, very herbaceous, fusel alcohol, pretty intense. In mouth, a rather surprising (in a bad way) mix of sweet candy sugar and sourish notes, off and unpleasant, medium bodied. Bieropholie import, tasted with GRM, Probstk and Mike H., Oct. 8 2010. 7-3-5-2-9 A reddish copper ale with a thin light mocha head. In aroma, nice sweet caramel malt with light vinous notes, candy sugar, light coriander, nice and smooth. In mouth, a nice roasted caramel malt with dark fruits, prunes, figs, light treacle, alcohol warmth, very nice. Bieropholie Import, BB 15/12/2011. 8-3-8-4-16

Draft. Creamy large beige head atop dark red-brown body. Aroma is moderately sweet, caramel, some plum. Taste is medium sweet, caramel, some plum/raisin, faint alcohol. Effervescent medium body.
