COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friars robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.
To all those who still hold dreams and will never cease to search for the happiness they deserve.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Todays Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.
It is like following an illusion we fell in love with a long time ago leaving us with the realization that when we pursue our dreams the immortality of spirit is found.

Bottle @ YNWA, Kolding.
Pours a magnificient deep, metallic red with a giant, staying, creamy head. It is white, but there are tones of yellow and pink. Aroma is sweet, some red berries, red currants, peach, caramel, some apples. Full and creamy mouthfeel. Flavour is mild, actually a bit underwhelming. Some yeast - like Tongerlo actually. The fruitiness gets more apparent as it settles. Light cherry and marzipan. Quite nice, actually.

Bottled. Amber coloured. Very unclear. Huge light brown dense head. ARoma of lacto, fruits, light citrus and spice. Flavour of lacto and sourness, Grape, fruits, light caramel notable. MEdiu to full bodied. very dry. Grapish fresh end. Very nice and refreshing.

Pours dark brown with a off-white head. Aroma has notes of malt, caramel, dried fruits and chalk. Taste is meidum sweet and light bitter with a long fruity, dried fruity and caramel finish. Body is medium, texture is thin to oily, carbonation is soft.

Bottle. Pours a hazy amber with a slight brown hue and a light brown head that lasts and laces nicely. Aroma has a slight wine note that combines surprisingly well with a strong sweet malt backbone with sweet grain and biscuit. Flavor began surprisingly wine forward with dry near tart red fruits that mellowed to allow caramel, biscuit and sweet grains come out for an interesting finish. Different but enjoyable.

Hazy orange with a huge off white head. Aroma had brett, lacto and toasted malt. Sour flavour with brett, lacto, sour berries and toasted malt. Finished dry and sourish.

Its unclear, red-brown with sediment and a creamy head. The aroma has notes of malt, dark fruits, caramel and sweet coffee. The mouth-feel is slightly fizzy. The flavour is sweet with notes of malt, caramel, filled chocolates, dark fruits, light cocoa, and the finish is dry with a light bitterness.

Bottle, Dec. 23rd Beer Advent Calendar. Murky medium brown body crowned with a bubbly tan head that compresses into a half-inch mattress. Nice malty character here, yeasty, toasty, with sweet dates, crusty bread, and dark fruits all playing on the palate. Just a hint of sourness, maybe more of a lactic acidity providing a nice finish. Enjoyed it thoroughly.

No head, copper-foxy beer. Solvent, diacetyl, powerfull and imposing - and not pleasing. Sharp MF, not finished, worts in full fermentation, hence the diacetyl, etc. Slick, buttery MF... Finish the beer, please.
