COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Brown color with a large white head. Spicy malty aroma with some, caramel and brown sugar. Malty, caramel, with citrus notes in the flavor with a nice bitterness finish.

Bottle @ ACBF 2011. A clear red/brown colored beer, with a beige head. The aroma of malts, fruits and vanilla. The taste of sparkling fruit, citus, winery. The aftertaste sweet fruity with some bitter.

Bottle at Alvinne CBF 2011. Dark red/brown colored beer, opaque, beige head. Smell malts, fruits and distant vanilla. Taste is pretty good, nice carbonation and medium to full body.

Bottiglia 33 cl. Colore ambrato carico, velato, con schiuma beige abbastanza persistente. Naso intenso, abbastanza persistente e complesso (fruttato, tostato, miele). in bocca entra dolce, morbida, abbastanza calda e con un bel corpo.......piaciuta!!

75cl bottle, teku glass. Pours an average white to beige and creamy head; slight ruby to really murky brown colour. Smells huge: ripe fruits, lots of pears, raisins, yeast, brown sugar. Tastes very fruity, pears, plums, caramel, sweet cocoa, spices; medium plus sweetness followed by a balancing bitterness that just cleans off the mouth, leaving a dried fruit and roasted malt finish. Medium bodied, sticky and silky. Strong character, balanced and very complex, enjoyed it

330ml bottle. No noticeable production dating. Appearance: Dark brown with a touch of ruby red, murky, with minimal khaki colored head that disappears immediately. Aroma: Malty, mostly toasted malt with a touch of caramel. Light sugary dark fruit, most noticeably plum. Taste: Rich malt sweetness, with toasted bread and caramel notes. Dark fruitiness shows up on the back of the palate, plum and prune like with a lot of residual sugar. A lot of sweetness on the swallow. Mouthfeel: Medium bodied with a moderate carbonation and a light alcohol warmth that is smooth. Finish: Finishes with plum fruit and sugar. Some toasted malt retronasally. Overall: A solid quad, noticeable lower in intensity and easier drinking than the more renowned versions. Maltiness is noticeably toasty, and the fruitiness is restrained. While this may not rate up with the best quads, I prefer it’s overall balance and drinkability to most.

Bottled. Pours foggy brown with modest off-white head. Aroma: strong malts of caramel, toffee, sourish yeastiness, dried fruit, candied sugar. Medium body. Soft carbonation. The taste is initially richly malty and lightly sweet. Fruity & spicy middle. The ending is pretty tart with malt toastiness and light hoppiness. Interesting.
