COMMERCIAL DESCRIPTION
Giovanni Campari (Birrificio del Ducato, Italy) & Tim Adams (Oxbow Brewing, Maine) came together to brew this new release!

Brewing/production notes from Tim Adams:

"We brewed a brown base beer, part of which was fermented in stainless with ale yeast, and the rest of the wort was knocked out directly into chrysopolis barrels and fermented solely by Ducato house souring organisms and brett. Following fermentation, the beer was blended back together and all racked into freshly dumped Brunello barrels. The beer was aged for several months in these barrels, followed by a final blending process."

Draft @ LCBF 2017. Pours an amber color with a small off-white head. Has a fruity sour woody caramel aroma. Fruity malty sour woody caramel flavor. Has a fruity malty sour tart woody caramel finish.

Keg at The White Horse Old Ale Festival, Parson's Green in Nov 2017 - Opaque amber brown in colour. Zero head (no room). Good condition. Very fruity; lots of plums, sour, tart, grapes. Yeasty; brett, funk. Malty; oaky. Hoppy. Quite vinous. Fantastic depth of flavour. Moderately bitter and sour fruity yeasty throughout. Lovely sour. Enjoyed this a lot. (2017-11)

Nice fizzy-creamy mediumlasting head. Aroma is slightly dry sour-ish boozy, oak, booze, bloodlike minerals, grass, berry skin, fruit stones, bark, toast, hay, weeds. Taste is slightly dry sour-ish grassy, weeds, oak, bark, bloodlike minerals, berry skin, fruit stones, mild vinegar, unripe berries, toast, hay. Medium bitterness, slightly dry and harsh sour-ish mouthfeel. Not really my cup of tea.

On tap at brewery. Pours reddish brown with a small off-white head. Aroma is toast, toffee, dark fruit (plum, I believe), and a little funk. Taste is tart; toast, spice, toffee, some vinegar, some lemon, wine, oak, and a little butter. Slightly drying finish. Faint alcohol on the tongue. Light-medium body. Moderate carbonation. Slick mouthfeel.
