Top fermented beer which undergoes a secondary fermentation in bottle. It is intense gold, almost orange in color, with aromas of fruit in syrup (pineapple, peach and apricot), candy sugar, bread crust and a note of chives from the Belgian hops of Poperinge. Warm and sweet on the palate with a firm fizzy finish. Strong and structured, sweet and inviting. A tribute to a friend who went missing, who we may meet again one day, just like the sun that is hiding behind the hill.

Winterlude is also named after a Bob Dylan song, a perfect fit since it is a winter warmer. The idea of winter as an interlude representing both the pause before awakening and the oblivion before new life.
This beer is inspired by some varieties of the Belgian Tripels. The hops come from the Poperinge region, a variety I have always been fascinated by. I connected with one of the region’s local farmer and had him set a preferred variety aside from his most recent harvest.
Because it combines incredibly well with food, Winterlude has always made us proud with our catering industry clients.

Aroma: yeast, sweet malts, caramel, grain, molasses. Appearance: hazy gold, massive, creamy, white head. Taste: light sweet. Palate: sweets continue, bread malts, caramel, soft carbonation, light, dry finish. Overall: very nice Tripel, excellent sweetness throughout. Pint at Italian Job, Chiswick.

330 mml bottle tasted on the 05/05/2015. Floral and hoppy aroma for a nice hazy golden colour beer. Taste is very floral too with presence of malts and some caramel. Next one please!

Tap. Italian Job, Chiswick. Hazy gold. Film of lasting, white head. Medicinal clove, first off. Chewy, grainy wheat. Drinks full, smooth, warming, and fairly bitter. Some dryness on the finish. Manages to be big, but a bit one dimensional.

Tap @ Bishop Folkis. Hazy yellow, white head. Spicy doughy aroma with white bread, apricot, orange peel, fredh basil, coriander, some alcohol. Sweet round doughy flavour with nectarines, banana and some herbs and peppery alcohol in the finish. ALSO a bit soft and sweet overall, despite some alcohol presence. Medium to bigger body with soft carbonation, oily sticky texture and alcohol heat in the aftertaste. Ok. A bit sweet and alcoholic. Unbalanced you could say.

Singularity (6370) - Blattniksele, SWEDEN - FEB 6, 2015
330 ml bottle at home. Deep golden bordering to light amber, Big white head that disappears fairly quickly. Aroma of freshly baked bread, apricots, light grapefruit, sweet malt and floral notes. Taste is medium sweet, bready, apricot, bitter herby and fruity hops with a long lingering finish with sweet fruit notes. Nice one!

Bottiglia. Color opalesciente schiuma candida mediamente fine non troppo persistente Aro effettivamente di frutta tropicale ho sentito papàya e zucchero candito. Palato nello standard sia come bollicine che come consistenza setosa al gusto prevale leggermente il dolce si sente molto zucchero candito nel complesso però estremamente equilibrata
